These gorgeous white chocolate covered strawberry cubes make the perfect treat for a summer party, family picnic or even a wedding! They're really easy to make and the combination of white chocolate and fresh strawberries goes perfectly together - like portable bite-sized strawberries and cream!
My boys go back to school in a few days so as the sunshine has reappeared and we are enjoying the last few days of the summer holidays, I'm sharing this last summer treat recipe before I start to turn my attention to autumn. How this year is flying by!
You can use any kind of ice cube tray to make these chocolate covered strawberries, I used a square silicone tray but any shape will work. Why not experiment with different shaped ice cube trays or moulds for the chocolate - the kids will have fun and they'll taste great however they come out!
White Chocolate Covered Strawberry Cubes
Ingredients (makes 15):
- 200g white chocolate
- 15 small fresh strawberries
Method:
Break the chocolate into pieces and place it in a microwave safe bowl.
Melt the chocolate pieces by cooking in the microwave for 30 second bursts, stirring between each one to ensure it melts evenly. Be careful not to overheat or burn the chocolate, heat only until just melted and smooth.
Drop spoonfuls of the chocolate into each section of your ice cube tray, dividing it equally between each section. The chocolate should fill each section to about half way up. Tip: Don't worry if the chocolate ends up dripping all over the place, any drips can easily be removed at the end!
Pop a strawberry into each section, pushing it down firmly so that it is well nested in the melted chocolate.
Place the ice cube tray in the fridge and chill for 20-30 minutes until the chocolate is completely set.
Carefully pop the chocolate covered strawberries out of the tray and serve immediately.
Notes: As they are made with fresh strawberries, these white chocolate covered strawberries are best eaten on the same day that they are made.
Recipe variations: Try using milk or dark chocolate in the place of the white chocolate, or swap strawberries for raspberries or cherries instead - yum!
