This yummy homemade strawberries and cream granola is a great summer breakfast recipe the whole family will love!
Start your day with a yummy treat - this easy strawberries and cream granola recipe makes a delicious breakfast for lazy summer mornings and is sure to be a hit with the whole family!
If you're looking for a summer holiday cooking project to make with the kids, homemade granola is an ideal recipe to try. It's easy to make, can be customised to suit your own tastes (or the contents of your cupboard!) and it's a really useful recipe too, as it's perfect for family breakfasts, snacks or a healthy dessert.
As long as it is full cooled and stored properly (in an airtight container somewhere cool and dry), homemade granola will last for a couple of months, so I usually make my homemade granola in bulk to save time. You just need to double or triple the recipe quantities to make a larger batch, the rest of the process remains the same.
Strawberries & Cream Granola
Ingredients:
- 1 Tbsp coconut oil
- 2 Tbsp honey
- 1 tsp vanilla extract
- 200g oats
- 50g white chocolate chunks or chips
- 36g freeze dried strawberries
Method:
Preheat your oven to 200°C (Gas mark 6/400°F).
Place the coconut oil in a small microwave safe bowl and warm it by microwaving at 15 second intervals until completely melted. Add the honey and vanilla extract, then stir to combine.
Weigh out the oats into a large bowl, add the coconut oil, honey and vanilla mixture and stir until the oat mixture is coated and starting to clump together.
Tip the mixture onto a baking tray or roasting tin and spread out in one even layer. If you’re doubling up the recipe, you’ll need to use two tins or trays.
Bake oats for 15 minutes, giving them a good stir half way through to help them cook evenly. Once the granola is cooked and golden, take out of the oven and leave to cool.
Whilst the oats are cooling, scatter over the white chocolate chunks.
Roughly chop the freeze dried strawberries into small pieces.
Once the oats are completely cool, scatter over the dried strawberry pieces and stir to mix in.
Store the granola in an airtight jar or container.
Serve with milk, or scatter over Greek yogurt and fresh strawberries for a delicious healthy treat!
Note: Use gluten free oats if you need to keep this recipe completely gluten free.
