A tasty alternative to sugary cereals - kids will love this delicious homemade Mango Pina Colada Granola recipe for breakfast!
Are you always trying to find a better solution for a quick breakfast than sugar coated cereals?
Despite wanting to make sure that my boys always have a healthy breakfast, I do often fall back on cereal anyway just because school mornings feel like my biggest struggle in parenting sometimes - the combination of having so many things to pull together all at once and me not being a morning person AT ALL means that sometimes to be quite honest even throwing cereal into a bowl seems a bit of a struggle!
I'm determined to improve our breakfasts though and have started making homemade granola again, so in today's post I'm sharing my favoruite new healthy breakfast creation - a mango pina colada healthy granola recipe.
Homemade granola might seem like a high effort idea, but actually it's incredibly easy to make and takes very little preparation time. It's the ideal little weekend project which you can then enjoy all week long.
The advantage of making your own is that you know exactly what goes into it and can avoid hidden additives and flavourings, and it tastes great too! This recipe is really easy to make in bulk for larger families, I usually make a double batch.
Mango Pina Colada Granola
Ingredients:
- 1 tbs coconut oil
- 2 tbs honey
- 200g oats
- 25g desiccated coconut
- 50g dried mango pieces
- 50g dried pineapple pieces
- 25g flaked coconut
Method:
Preheat the oven to 200°C (Gas mark 6/400°F).
Warm the coconut oil by microwaving at 15 second intervals in a small microwave safe bowl until completely melted. Add the honey and stir to combine.
Weigh out the oats and desiccated coconut into a large bowl, add the coconut oil and honey mixture and stir until the oat mixture is coated and starting to clump together.
Tip the mixture into a roasting tin or baking tray and spread out over in one even layer. If you’re doubling up the recipe, you’ll need to use two tins or trays.
Bake for 15 minutes, shaking half way through. Take out of the oven and leave to cool.
Whilst the oats are cooling, weigh out the dried mango pieces, dried pineapple pieces and flaked coconut. If your dried fruit pieces are fairly chunky, cut them into smaller pieces - I cut mine into quarters.
Once the oats are cool, mix in the mango, pineapple and flaked coconut.
Store in an airtight jar or container.

As well as for breakfast, granola is also great to use as a healthy snack or even for lunch boxes - pop some in a little tub to use as a topping for natural or Greek yoghurt, a far healthier alternative to the corner style yoghurts you can buy. Homemade granola is really customisable too, I'm looking forward to experimenting with more fun granola flavours so watch this space for more recipes to come!
