To make cooking with the kids easier for you, you’ll find a special printable child friendly recipe sheet towards the end of this post, as well as the usual recipe card at the very end.
I’ve also offered a range of different ingredient options further down this post, so you can adapt this recipe to suit whatever flavours you fancy, or whatever supplies have in your cupboards right now.
As long as it is cooled completely and stored properly (in an airtight container, somewhere cool and dry), this homemade granola will last for a couple of months, so you might want to make it in bulk to save time. You just need to double or triple the recipe quantities to make a larger batch - the rest of the process remains the same.
Easy Homemade Granola
Ingredients:
- 1 Tbsp coconut oil
- 2 Tbsp honey
- 1 tsp vanilla extract
- 200g oats
Optional extras (see alternatives below):
- 100g dried fruit of your choice
- 50g seeds or roughly chopped (unsalted) nuts of your choice
Method:
Preheat your oven to 180°C (Gas mark 6/400°F).
Place the coconut oil in a small microwave safe bowl and warm it by microwaving at 15 second intervals until completely melted. Add the honey and vanilla extract, then stir to combine.
Weigh out the oats into a large bowl, then add the coconut oil, honey and vanilla mixture and stir until the oats are coated and starting to clump together.
Tip the mixture onto a baking tray or roasting tin and spread out in one even layer.
Bake oats for 15 minutes, giving them a good stir half way through to help them cook evenly. Once the granola is cooked and golden, take out of the oven and leave to cool.
Once the granola is cool, tip into a large bowl and add dried fruit and nuts if using. Mix together until combined.
Store the granola in an airtight jar or container (be sure to check that it is completely cool before storing otherwise it won't stay crispy).
Serve with milk, or scatter over Greek yogurt and add fresh fruit for a delicious healthy treat!
Note: Use gluten free oats if you need to keep this recipe completely gluten free.
Alternative Ingredients:
If you don't have coconut oil, you can use vegetable oil, sunflower oil, rapeseed oil or for a nuttier taste, a nut oil such as groundnut oil, walnut oil or even sesame oil.
If you don't have honey or would like to keep the recipe vegan and/or suitable for children under 12 months, use maple syrup instead. Failing that, golden syrup would also work as a slightly less healthy substitute.
The vanilla extract is not crucial, but does add a lovely extra hint of sweet flavour to the granola. You could also swap the vanilla for a different flavour by using a teaspoon of spice such as cinnamon or mixed spice (pumpkin pie spice).
Here are some ideas you could try for the optional extras:
Dried Fruit:
- raisins / sultanas / currants
- cranberries
- chopped apricots
- chopped dates / prunes
- chopped apple rings
- chopped mango
- banana chips
- blueberries
- freeze dried strawberries or raspberries
Seeds:
- ready mixed seeds
- pumpkin seeds
- sunflower seeds
- pine nuts
- sesame seeds
- flax seeds
Nuts (don't forget to roughly chop them):
- ready mixed nuts
- walnuts
- pecan nuts
- cashew nuts
- almonds
- hazelnuts
- shelled pistachio nuts
- macadamia nuts
- brazil nuts
Or for a special treat, you could add a handful of one of these sweet treats:
- milk chocolate chips
- white chocolate chips
- chopped up chocolate bars
- mini chocolate beans
- mini fudge cubes
