Super Healthy Granola Bar Recipe

Today's super healthy granola bar recipe is another from the National Lottery Good Causes Food Champions website. The site hosts a fantastic collection of healthy recipes from Olympic athletes to encourage us all to eat like Olympians this summer.

I've already tried the gorgeous strawberry and greek yogurt smoothie and the delicious salmon fishcakes from the site, so I picked out this granola bar recipe to try next as I think it makes a great snack to refuel active kids this summer.

This recipe comes from Olympian Dame Mary Peters. Dame Mary Peters is an Olympic gold medallist in the women’s pentathlon and regarded as one of Northern Ireland’s greatest ever athletes. She set a then world record to claim gold in the 1972 games in Munich, a victory which was named Northern Ireland’s greatest sporting moment in a poll conducted by the National Lottery in 2013.

More than 40 years after her Olympic triumph, Dame Mary remains a sporting ambassador and inspiration. The Mary Peters Trust supports young sportsmen and women, able-bodied and disabled throughout Northern Ireland to realise their full potential.

Mary's Great Granola Bar

Ingredients: 

  • 200g dried dates
  • 100g dried figs
  • 200g porridge oats
  • 75g goji berries
  • 75g blueberries
  • 2 tbsp flax seeds
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 tbs pumpkin seeds
  • 1 tbs manuka honey

Method: 

Preheat the oven to 200°C (gas mark 6/400°F).

Roughly chop the dates and figs. Pop them into a pan and cover with water. Simmer for 30 minutes until you have a sticky gooey mixture.

Meanwhile,  spread the oats over a large baking tray and toast in the oven for 5-10 minutes until golden brown. Leave to cool while you prepare the rest of the ingredients.

Once the dates and figs are ready, pour them into a large bowl and add the goji berries, blueberries and flax seeds. Stir well to combine then leave to stand for 10 minutes. Turn the oven back on, this time to 150°C (gas mark 2/300°F).

Line a tin with baking paper, leaving an overhang of paper for easy removal.

Stir the remaining ingredients into the bowl and mix well. Tip the mixture into the tin and press down well with the back of a spoon.

Bake for 15-18 minutes.

Leave to cool before slicing into pieces.

Serve with a delicious green smoothie.

    what a brilliant granola bar recipe with no refined sugar and only a bit of honey - often the healthy versions still end up with loads of maple syrup or honey so this one looks great to try out!

      Hi Joey,

      Yes this can, you'll need to wrap them well in plastic wrap or a freezer bag to prevent freezer burn. Hope that helps!

    I will try this recipe it looks healthy.
    Can the bars be kept for some days or they are supposed to be eaten thw same day they are prepared?

      Hi, I hope you enjoy it! The bars will keep fine for a couple of days - just keep them in an airtight box somewhere fairly cool.
