    Strawberry Granola Frozen Yoghurt Bites Recipe

    Inspiration struck recently and I couldn't resist following it up, so today I'm sharing another variation on my frozen fruity yoghurt bites recipe - this time some absolutely delicious strawberry granola frozen yoghurt bites. 

    This recipe came about because we've had such lovely sunny weather recently and I was planning on making another batch of yoghurt bites to stock up the freezer. 

    I wanted to try them with strawberries, and as I was deciding how best to incorporate the strawberries, with a vague idea of mashing them in (as I did with the banana version), I spotted a bag of strawberry granola on our kitchen counter and a new plan began to form.

    These bites came out absolutely perfectly, they taste just like little frozen strawberry cheesecakes, definitely the best I've made yet! 

    As well as being the easiest recipe ever, they are also perfect for pretty much any occasion, from after school snacks to dessert to the most delicious breakfast idea for warm summer days!

    As with all my recipes, feel free to adapt to suit your taste and needs, using whichever brand of yoghurt and/or granola you prefer.

    Strawberry Granola Frozen Yogurt Bites

    Ingredients

    • 200g strawberry yogurt (we used Yeo Valley, it's absolutely gorgeous!)
    •  50g Granola*
    •  6 large fresh strawberries

    Method

    Gather together your ingredients.  Lay out approximately 12 cupcake cases or silicone muffin cups on a small baking sheet or tray (this will need to fit in your freezer, so it may be worth checking it for size before you start).

    Sprinkle a thin layer of granola over the bottom of each cake case.  Using a spoon, dollop some yogurt on top of the granola in each cake case until all the yogurt has gone. Spread the yogurt around with the spoon to ensure it completely covers the granola.

    Hull each strawberry and cut it in half, then use the halves to top each cake case, pressing them down into the yogurt with the tip of your finger.

    Place the cups (still on the baking tray) into the freezer and leave to freeze for a couple of hours until set solid.

    Once frozen through, remove from the cases and serve (or bag up and pop straight back in the freezer to eat later).

    *Note: We used ready-made strawberry granola but you could also make your own - check out my Strawberries and Cream Granola recipe.

    These are great to munch on straight out of the freezer as a yummy snack, dessert or breakfast idea.  You may want to take them out for a couple of minutes before eating so they soften a little, but not too long or they'll melt!

    You could even pack them in a lunch box – the yogurt will melt enough to eat with a spoon by lunch time but it will still be lovely and cool and make a tasty dessert. Just be sure to pack them in a leak-proof tub or compartmented lunch box like the Yumbox.
