Easy Porridge Recipe with Summer Berries Topping

No matter the time of year, you can't beat a bowl of porridge for a quick and easy breakfast that will keep your family going all morning.

Today I'm sharing my easy microwave porridge recipe topped with seasonal berries that are the perfect match for the beautiful sunshine we've been having recently!

How to make microwave porridge in 5 minutes - quick and easy breakfast idea that is perfect for busy weekday mornings with kids

There are different ways that you can make porridge, but my favourite method for busy weekday mornings is to pop it in the microwave as it takes less than 5 minutes to cook. It's so quick and easy that my 10 year old can make it himself.

We like to keep our morning porridge interesting by varying the toppings, so I'm always delighted when berries start to come into season. They're utterly delicious with a drizzle of honey and some flaked almonds sprinkled on top.

Easy Porridge with Summer Berries Topping

Ingredients (serves 2):

  • 100g rolled oats
  • 400g semi-skimmed milk
  • 1 tsp vanilla extract

To serve:

  • 200g mixture of fresh summer berries (I used strawberries, blueberries, raspberries and blackberries)
  • 1 Tbsp honey
  • 1 Tbsp flaked almonds (optional)

Easy microwave porridge recipe with summer berries - ingredients

Method: 

Measure out the oats and milk into a microwave safe bowl, then add the vanilla extract and stir to combine.

Cook on high in the microwave for 3 minutes.

Remove from the microwave and stir again then place back in the microwave.

Continue to cook at 30 second intervals, stirring in between, until the porridge is at your desired consistency.

Whilst the porridge is cooking, prepare the fruit; hull and roughly chop the strawberries, rinse the blueberries, raspberries and blackberries under cold water and drain well on kitchen paper.

Mix the fruit together.

Once cooked, split the porridge between two bowls and top with the mixed fruit.

Drizzle both bowls with honey and sprinkle over flaked almonds, if using.
