This yummy Banana Cranberry Baked Oats recipe is made extra special with Nutella, for the perfect festive family breakfast!
For today's post, I've taken my usual baked oats breakfast recipe and jazzed it up to make Banana & Cranberry Baked Oats with Nutella Drizzle, for an extra special breakfast for the festive season!
Be sure to check out my recipe video so you can see just how easy these are to make!
This easy breakfast recipe is made extra tasty with the addition of festive cranberries, a drizzle of yummy Nutella and a scattering of hazelnuts to finish - my way of stretching a single portion of Nutella to make a decadent tasting but still balanced breakfast the whole family will love.
I'm a great believer in 'everything in moderation', so when Nutella challenged me to create a balanced breakfast recipe with an extra tasty touch in the form of a heaped teaspoon of Nutella, I was more than happy to get recipe testing.
I decided to make baked oats for my special festive breakfast as they always feel like a real treat to me. They have all the goodness of porridge, but they look and taste like a warm dessert - you can't get better than that on a chilly winter morning!
During the week I try to keep my boys breakfasts as quick, easy and low in sugar as possible, but at the weekends we like to relax a little and treat ourselves to breakfast recipes that take a bit more time to make and are a little more special.
As this recipe proves though, you don't have to go all out with hundreds of extra calories to enjoy a 'treat' breakfast - a portion of Nutella (one heaped teaspoon, 15g) is just 80kcal!
I've created a quick recipe video for you so you can see just how easy this recipe is. Banana & Cranberry Baked Oats with Nutella & Hazlenut Topping
Ingredients (serves 4):
- 3 large eggs
- 1 banana (approx. 125g peeled)
- 150g thick Greek yogurt
- 1 tsp vanilla extract
- 150g rolled oats
- 1 tsp baking powder
- 100g dried cranberries
To serve:
- 120g thick Greek yogurt
- 1 tsp vanilla extract
- 1 large banana, sliced
- 4 tsp (60g) Nutella
- 4 tsp chopped hazelnuts
Method:
Preheat the oven to 200°C (Gas mark 4/400°F).
Crack and lightly whisk the eggs.
Peel and mash the banana and place in a mixing bowl. Add the yogurt, whisked eggs and vanilla extract. Stir well until completely mixed together.
Add the oats and baking powder. Stir well again until completely mixed together.
Stir in the dried cranberries so that they are evenly distributed through the mixture.
Lightly oil 4 oven proof ramekins (I use a coconut oil spray for mine). Divide the mixture between the 4 ramekins, making sure that there is room for the mixture to rise in each one.
Place in the oven and bake for 20-25 minutes until golden and cooked through.
Meanwhile, prepare the toppings. Measure the yogurt and vanilla extract together in a bowl. Stir until completely combined.
Measure and spoon the Nutella into a disposable piping bag or small plastic bag. Snip off the corner then squeeze the Nutella down to the bottom, ready to pipe on top of your oats.
Peel and slice the banana.
Leave the baked oats to cool a little before serving.
To serve, top each bowl with a spoonful of the vanilla yogurt topping and sliced banana. Pipe over the Nutella (divided equally between the four portions) and finish with a generous sprinkle of chopped hazelnuts.
Enjoy!
Do you like to enjoy special family breakfasts over the festive season? Why not spread some extra happiness with a spoonful of Nutella on top!

Hello! Where did you get the ramekins from?
Grace Hall says
Hi Jessica, they were a gift from my Mum a few years ago, I think she may have got them from Dunelm but I'm not certain. Sorry not to be much help there!
