    Easy Homemade Macaroni Cheese Recipe with Peas & Sweetcorn

    My easy homemade macaroni cheese recipe with peas and sweetcorn is a yummy twist on a family classic! It has extra vegetables hidden inside for a healthier family meal that kids will love!

    Inspired by Arla Organic Free Range milk, I've created three new recipes to share here on the blog this week, including my twist on the family classic macaroni cheese, the recipe for which you'll find further down this post.

    My version of macaroni cheese has extra veggies hidden inside, and is topped with sliced tomato for even more healthy goodness! You'll find links to the other two recipes below, and you can also see me making all three recipes in my YouTube video today.

    Milk is one of the foods that I always try to buy organic, it’s such a staple, particularly for my kids, so we get through a lot of it every week!

    I buy organic milk for several reasons. I know that the cows that produce Arla organic milk are fed on grass that is free of chemicals. The cows are also free range, so they’re grazing outside as much as possible, and their farmers believe in sustainable farming methods.

     Last, but certainly not least, here's the recipe for my delicious twist on macaroni cheese with added peas and sweetcorn.

    Macaroni cheese recipe with peas sweetcorn and sliced tomato - add extra vegetables to a classic family dish for a healthier meal the kids will love

    Easy Macaroni Cheese with Peas & Sweetcorn

    Ingredients (serves 4): 

    • 250g dried macaroni pasta shapes
    • 150g frozen mixed peas and sweetcorn
    • 50g butter
    • 50g plain flour
    • 500ml  milk
    • 200g grated cheddar cheese
    • 2 tomatoes

    Macaroni cheese with peas and sweetcorn - ingredients

    Method: 

    Preheat your oven to 190°C (Gas mark 5/375°F).

    Cook the pasta following pack instructions, adding the peas and sweetcorn for the last 2 minutes of cooking.

    While the pasta is cooking, make the cheese sauce:

    In a large saucepan, gently melt the butter.

    Add the flour and stir for a few minutes until well combined with the butter.

    Add the milk to the pan, a little at a time, whisking constantly until completely combined and smooth.

    Cook for 4-5 minutes until the sauce starts to thicken.

    Add half of the grated cheese (100g) and stir until it melts into the sauce.

    Take off the heat and add the drained pasta, peas and sweetcorn to the sauce, mixing well to ensure all of the pasta is coated.

    Divide the mixture between four small serving dishes, or pour it all into one large dish.

    Top with the remaining cheese, then slice the tomatoes and place a couple of slices on top of each dish.

    Bake in the oven for 15-20 minutes until the cheese is bubbling and the tomato cooked through.

    Serve and enjoy!

    Homemade easy macaroni cheese recipe with peas and sweetcorn - add extra vegetables to a classic family recipe for a healthier meal the kids will love

    Notes: Make sure you allow the individual dishes to cool a little before serving to children as they will be VERY hot straight from the oven.
    If baking all in one dish, add an extra five minutes to the cooking time.

    Ingredients
