Celebrate the sunshine with these cute sandy beach yogurt parfaits! This fun and easy yogurt parfait recipe is perfect for serving up at a beach themed party for a fun and healthy summer dessert that kids will love.

I've been hard at work in the kitchen creating lots of new fun summer themed recipes for kids this week. Today's beach inspired recipe is the first of lots of new fun food ideas and recipes that will be appearing here on the blog over the next weeks so if you're in the mood for summer, this is the place to be!
I used one of my homemade coconut sprinkle mixes for this recipe, as the 'Beach Mix' made the perfect sandy topping to bring this yummy dessert to life.

For the apricot jam I used St. Dalfour Apricot Preserve, which is one of my favourite jam brands as it's made with 100% fruit. I finished our mini sandy beaches with Organix fruit gummy stars, plus a cocktail beach umbrella to keep them nicely shaded! My boys thoroughly enjoyed testing this recipe for me, and I've already had several requests to make them again.
Sandy Beach Yogurt Parfaits
Ingredients (makes 4):
- 8 tsp apricot jam
- 500g thick Greek yogurt
- 4 heaped tsp homemade coconut sprinkles - beach mix
- 1 bag Organix Blackcurrant & Apple Gummy Stars
- 4 paper cocktail umbrellas
Method:
Place a spoonful of apricot jam in the bottom of a small glass.
Spoon over thick Greek yogurt to fill the glass to around half-way up.
Place another spoonful of apricot jam in the glass, spreading it around with the back to the spoon so that it forms an even layer right up to the sides of the glass.
Add another layer of yogurt until the glass is almost full.
Repeat to fill 3 more glasses with layered jam and yogurt.
Sprinkle over a generous teaspoon of coconut sprinkles to coat the top of the yogurt in each glass.
Add 2 or 3 gummy stars to each glass for starfish.
Finish of with a paper umbrella pushed into the top of each glass.
Serve immediately or place in the fridge for an hour or two until ready to serve.

Sandy Beach Yogurt Parfaits
