These mini tortilla pizza boats are quick and easy to make - perfect ocean or boat themed party food or a great fun meal for kids!
Following on from my Sandy Beach Yogurt Parfaits, today I have another fun beach inspired recipe to share with you - cute mini tortilla pizza boats.
This fun ocean themed pizza recipe is quick and easy, makes a great fun meal for kids and is sure to be a hit with the whole family this summer!

My mum is the original fun food creator in the family - despite having seven of us children she still found time to add fun to our food on many occasions throughout my childhood and she continues to inspire my adventures in the kitchen.
If you're throwing a beach or ocean themed party, these little pizza boats would make perfect themed party food, or just serve them up for a fun meal any time you want to raise a smile - they're even quick and easy enough for a week night dinner!
Fun Tortilla Pizza Boats
Ingredients (makes 6 mini boats):

6 mini stand 'n' stuff tortillas
-
1 Tbsp tomato purée
-
3 Tbsp tinned sweetcorn
-
¼ red pepper
-
½ small red onion
-
60g cheddar cheese
To serve:
-
12 small circles of ham
-
bamboo or plastic skewers
Method:
Preheat the oven to 180°C (Gas mark 4/350°F).
Place the six empty tortilla shells on a baking tray.
Divide the tomato purée between the 6 shells, then using the back of a spoon, spread it around inside the bottom of each shell.
Prepare the vegetables - drain the sweetcorn, de-seed and finely chop the pepper, peel and finely chop the red onion.
Scatter the sweetcorn, red pepper and red onion into the tortilla shells, dividing them between all six.
Grate the cheese and scatter over the top of the vegetables in each tortilla.
Bake the tortilla pizzas in the preheated oven for 8-10 minutes, until the cheese is melted and bubbling.
Remove from the oven and leave to cool for a few minutes.
Whilst the pizza boats are cooling, make the ham sails ready to decorate them.
Take a circle of ham and gently concertina fold it into 3. Push a skewer through the folded ham, then repeat with a second circle of ham on the same skewer. Once on the skewer, gently pull the ham slices apart again to form the sails.
When ready to serve, pop the pizza boats onto a plate and push a ham sail into the top of each one.
Serve immediately and enjoy!
Note: The pizza boats can also be served cold, so they're great for making a few hours ahead for a party. If serving cold, don't add the ham sails until just before serving.
