Though the sun seems to have disappeared again, I'm in a summery mood at the moment, so today I'm sharing a cute and easy summer snack idea for mini pepper boats. These are so quick and easy to put together, you could easily make them in bulk as a fun side dish for a summer barbecue or kids party food.
My boys really enjoyed this mini pepper boats recipe, they were fun and yummy to eat and also fun to make. Older children can easily make these all by themselves (there are only 3 ingredients after all!) and younger children or toddlers can assemble the boats themselves if an adult does the parts of the recipe requiring a sharp knife.
Mini Pepper Boats
Ingredients:
- Mini peppers
- Cream cheese (I used garlic & herb Philadelphia)
- 1 large carrot
Method:
Start by slicing a pepper in half lengthways. Cut out and discard the inner parts and seeds, leaving the rest of the peppers halves intact.
Scoop some cream cheese into the pepper and spread around inside it, then smooth over the top with the back of a knife.
Wash the carrot, then cut into thick slices and slice them into triangles (check out the video below if you'd like to see how I cut the carrot).
Press a triangle of carrot into the cheese in each pepper half to form the sails.
Arrange on a platter and serve immediately. Enjoy!
