    Courgette (Zuccini) Pizza Bites

    In the interests of total honesty, I have a confession to make... the recipe I'm sharing today did not go down well with my boys at all! BUT, I really, really enjoyed it myself (I couldn't stop eating them!), so I thought it was worth sharing anyway because everyone's tastes are different and your kids might love them.  Assuming that (unlike mine) your children are willing to give courgette a go, or zucchini, for my American readers, these yummy pizza bites can be a great way of adding an extra portion of vegetables to their day.  They make a fun snack or delicious side dish with any meal and the recipe is so easy that kids can make it themselves, with a little supervision for the hot oven of course. They're also an excellent way of using up excess courgettes if you have a glut this summer.

    I've created a child friendly printable recipe sheet to go with this recipe - written in simple language, it's a great way of encouraging independence in the kitchen for kids, and following a recipe from start to finish 'all by themselves' can be such a brilliant confidence boost!     Courgette Pizza Bites

    Ingredients: 

    • 1 tbs olive oil
    • 1 large courgette (zucchini)
    • 1 tbs tomato puree
    • 100g mini mozzarella balls
    • Italian dried mixed herbs

    Method: 

    Preheat the oven to 200°C (Gas mark 6/390°F). Brush a baking tray with a little of the olive oil.

    Wash and dry the courgette and cut each end off (discard the ends).  Cut the courgette into thick slices.

    Place slices on the baking tray and brush with the rest of the oil.

    Bake in the oven for 10 minutes, then take out the tray, turn all of the courgette pieces over and spread a thin layer of tomato puree on each piece.

    Add one mozzarella ball to each slice (larger slices might need two) and sprinkle with the herbs.

    Bake in the oven for another 8 minutes, until the cheese is melted and the courgette cooked through.

    Leave to cool for a few minutes before serving, they'll be VERY hot straight from the oven!

      I've made these tonight Grace, and they were lovely. I used grated cheddar instead of mozzarella balls, but they were a big hit with my daughter and I. Thank you.
