I realised this week that I hadn't actually shared the recipe here on the blog, so I'm sharing it today. This totally delicious child friendly ice lolly recipe couldn't be easier to make! With nothing but a carton of ready made custard (we used a low fat version) and a banana you can make your own custard ice lollies in minutes and they're sure to be a hit with the kids!

These ice lollies were something of an experiment - I was wondering if I you can freeze leftover custard and a flash of inspiration hit! I decided to try using my popsicle mould to freeze them and bananas seemed the natural partner - bananas and custard being a childhood dessert favourite! I tested them on the whole family and am happy to confirm that they went down very well indeed, with arguments over the last one left even though we had other ice lollies in the freezer!
Bananas & Custard Ice Lollies
Ingredients:
- 500g carton low fat ready to serve custard
- 1 banana
Equipment:
Method:
Peel and slice the banana.
Carefully stick 2 banana slices, one each side, to the inside of each popsicle mould, then push them down to the bottom with your fingers.
Cut open the custard carton and pour or spoon custard into each popsicle mould, filling them to about half way up.
Add 2 more banana slices to each mould then top up with the remaining custard, taking care not to overfill.
Place the lid on the mould and press the popsicle sticks into place. Place the mould into the freezer for 2-3 hours or overnight until the ice lollies are set and frozen through.
Remove from the mould and serve immediately, or place lollies in a freezer bag and refreeze until ready to eat.
Notes: It can sometimes be tricky to successfully remove ice lollies from a popsicle mould. The easiest way is to fill the sink or a large bowl with hot water and dip the mould into the water for a few seconds at a time (taking care not to get water on the top), until the ice lollies slide out easily.
