Can you believe it's the last week of the summer holidays?! I can't, I never want the summer to end, so I'm clinging onto it with my fingernails and sharing one last summer ice lolly recipe before I admit defeat! Continuing my love of all things rainbow, especially edible rainbows, these rainbow fruit popsicles are really easy to make and the whole family loved them.
I've seen many ice lollies with fruit embedded in them on Pinterest but I wanted to see if I could get a nice rainbow effect, so I picked some freezer friendly fruits and tried arranging them neatly in rainbow order! I'm so pleased with how they turned out, they looked pretty and tasted great!
Rainbow Fruit Popsicles
Ingredients:
- blueberries
- red grapes
- strawberries or raspberries
- tinned peach slices
- green grapes
- sugar free lemonade
Method:
Prepare the fruit - wash the blueberries, grapes and strawberries/raspberries, slice the grapes, hull and slice the strawberries. Drain the peach slices and cut into small pieces.
Fill your ice lolly moulds with fruit in the following order; blueberries, sliced red grapes, strawberries or raspberries, tinned peach pieces and green grapes. Make sure you fill them quite tightly so the fruit doesn't move around too much when the liquid is added.
Pour over the lemonade to fill the moulds. You might need to tap the ice lolly mould gently on the counter to release any air trapped beneath the fruit, then top up with more lemonade until all of the moulds are full.
Carefully add a lolly stick to each mould, taking care not to disturb the rainbow layers too much.
Add the lid, then pop the ice lolly mould into the freezer until completely frozen through. This may take a couple of hours or overnight, depending on your freezer.
Serve and enjoy!
Notes: I used sugar free lemonade for my ice lollies but if preferred you could also try coconut water or even plain or fizzy water, the fruit is the highlight!
I tried both strawberries and raspberries (making 4 of each) in this recipe and they both worked well, so feel free to use either or both.
I'm following the Slimming World diet at the moment, so if any of you are also following it you'll be happy to hear that as long as you use sugar-free lemonade, these ice lollies are a delicious low syn treat on the Slimming World plan at less than 1 syn each. You could also swap the tinned peach slices for fresh peach, nectarine or mango to make them completely free.

Yes, yes, yes! You could add any fruit you like really, couldn't you? They're a much better alternative to the sugar-laden ice lollies you find in the shops.
