    Super Easy Pineapple Ice Pops Recipe - 4 Ways!

    Today's recipe is for the easiest ice lollies I've ever made! A couple of years ago I had a flash of inspiration when I created my pineapple ring ice pops, and this week I took them to another level with a few easy tweaks that make them even yummier!

    You don't need any special equipment to make these ice pops, no ice lolly or ice pop moulds, just a few cake pop or lollipop sticks and some pineapple rings, plus toppings of your choice (toppings are entirely optional though).

    Frozen Pineapple Ice Pops

    Ingredients:

    • 450g tin pineapple slices in juice
    • Cake pop or lolly sticks

    Optional extras:

    • 100g dark chocolate
    • 200g coconut yogurt
    • 100g desiccated coconut

    Method: 

    Line a small baking tray with grease-proof or baking paper (being sure to check that the tray fits into your freezer first!).

    Drain the pineapple slices, reserving the juice for other recipes - it's great to pop in a smoothie!

    Place the pineapple rings on the lined baking tray, with a small space in  between each one.

    Carefully push a cake pop or lolly stick into each pineapple ring, going all the way through to the other side (this will help it stay put on the stick).

    Place the tray in the freezer for a couple of hours or overnight until the rings are frozen through. Serve immediately as they are or try one of the variations below:

    Dark Chocolate 

    Follow the steps as above.  Once the rings are frozen, melt 100g dark chocolate in a small bowl. Dip the frozen rings into the chocolate, return to the tray and freeze for 15 minutes until the dark chocolate has completely set.

    Yogurt

    Follow the steps as above.  Once the rings are frozen, pour 200g yogurt of your choice (I used coconut) into a shallow bowl. Dip the frozen rings into the yogurt, return to the tray and freeze for again until the yogurt has frozen through and set.

    Coconut

    Follow the steps as above, but after draining the pineapple, pour desiccated or shredded coconut onto a plate and dip each pineapple ring in it to cover on both sides. Place the coconut covered pineapple rings on the lined baking tray, push in the cake pop sticks and freeze as above.

    Notes: Make sure you buy pineapple slices or rings - pineapple chunks won't work for this recipe! If you do accidentally buy the chunks, all is not lost, try threading them onto bamboo skewers and freezing as above to make stick ice pops.

    Get ready for summer with these quick and easy frozen pineapple ice pops - no fancy equipment or moulds needed. They make a great healthy snack for the whole family!
