The sun is shining and I'm feeling bright and cheerful, so I'm declaring this week Rainbow Week on the Eats Amazing blog!
In today's post I'm sharing a healthy rainbow fruit sundae recipe idea that takes just minutes to put together. It's simple, colourful, and full of healthy ingredients to tempt even the fussiest eater.
I'm a great believer in presentation being absolutely key to the enjoyment of food, and I think that the presentation of this simple fruit salad makes it very easy on the eyes!
Serve it up as a healthy dessert, fun after school snack or even a tasty breakfast, and maybe get your child involved by letting them choose the ingredients and create their own rainbow sundae!
Healthy Rainbow Fruit Sundae
Ingredients
- natural yogurt
- ½ fresh mango
- 1 kiwi fruit
- handful blueberries
- handful red grapes
- ½ punnet fresh strawberries
Method
Prepare the fruit - peel and chop the mango and kiwi fruit into bite-sized chunks, wash the blueberries, wash and halve the grapes, wash, hull and chop the strawberries into bite-sized pieces.
Drop spoonful's of the natural yogurt into the bottom of a sundae glass. If you don't have a sundae glass then any tall glass will work just as well. Layer the fruit in the glass one colour at a time. I started with mango because I think it goes particularly nicely with natural yogurt, then topped with kiwi, blueberries, grapes and finally strawberries.
Grab a spoon and dig in!
Swap fruits to suit your tastes - you'll need to use at least three or four different coloured fruits to get the rainbow effect. For extra rainbow fun, add a few sprinkles on top, or hide a few mini marshmallows in the yogurt for a yummy surprise!
