    Easy Rainbow Fruit Salad Recipe

    This easy rainbow fruit salad recipe with simple 2 ingredient dressing makes a perfect quick and healthy dessert for kids!

    The sun has been shining recently and there's a hint of spring in the air, so today I'm sharing a bright and easy rainbow fruit salad recipe that's perfect for warm sunny days. 

    This is such an easy fruit salad to make - simply prepare the fruit, drizzle over the two ingredient dressing and you're done! Though I made it myself on this occasion, this would also be a great easy recipe for kids to make too.

    As with most of my recipes you can easily adapt it - feel free to swap fruits in or out to suit your needs! I chose fruits of varying colours and textures to get the rainbow effect, which is worth bearing in mind if swapping the ingredients around.

    Serve this easy fruit salad with a dollop of natural yogurt for a healthy breakfast, pack it in a lunch box, dish it up for a delicious and healthy dessert or keep a bowl in the fridge for snacking on throughout the day - however you use it, the bright colours and simple, healthy ingredients of this fruit salad mean that it's sure to be a hit with the whole family!

    Easy Rainbow Fruit Salad

    Ingredients (serves 4):

    • 1 ripe mango
    • 2 kiwi fruits
    • 1 clementine or mandarin orange
    • 300g strawberries
    • 150g grapes
    • 100g blueberries

    For the dressing:

    • 2 tbs orange juice
    • 2 tsp honey

    Method:

    Prepare the fruit; peel, stone and chop the mango into bite size pieces, peel and chop the kiwi fruits, peel the clementine, break into segments and cut each segment in half, hull and roughly chop the strawberries and halve the grapes.

    Throw all of the fruit into a large bowl and toss gently to mix together.

    Whisk the orange juice and honey together and drizzle over the salad.

    Serve immediately or cover and keep in the fridge until needed.

    This fruit salad will keep well in the fridge for a day or two, but if you want to keep it any longer I'd recommend saving the dressing and adding just before serving.
