    Dark Chocolate Halloween Popcorn

    This easy Halloween popcorn with dark chocolate is a fun recipe to make with kids and the perfect Halloween snack for a spooky movie night!

    Continuing on with the Halloween themed food this week, today I'm sharing a yummy Dark Chocolate Halloween Popcorn recipe.

    This is a simple snack mix of dried fruit (in Halloween colours of black and orange) and popcorn, drizzled with dark chocolate and finished with spooky eyes, of course!

    This fun Halloween recipe is really simple and a great one to make with the kids. The popcorn is really fun to make on the stove top,  it only takes a few minutes and I’ve found that my children love watching it and squealing with excitement as each kernel pops.

    It’s even more fun if you have a saucepan with a glass lid as you can see the popcorn bouncing around inside!

    It's perfect to accompany a family Halloween movie night - we enjoyed ours with the classic The Nightmare Before Christmas which my boys loved as much as their popcorn treat!

    You could also bag it up in cellophane bags as a fun Halloween party favour or snack - try tying it up with orange or black ribbon for an extra Halloween touch.

    Dark Chocolate Halloween Popcorn

    Ingredients: 

    • 1 tsp coconut oil
    • 100g popping corn kernels
    • 100g dark chocolate
    • 50g chopped dried apricot
    • 50g raisins
    • ½ pack edible candy eyeballs

    Method: 

    Line a small baking tray with grease-proof or baking paper.

    Prepare the popcorn – you’ll need a saucepan with a tight fitting lid for this.

    On a medium heat, melt the coconut oil in the saucepan until it is liquid. Measure out the popping corn kernels, add to the pan and shake to coat in the oil.

    Cover the pan and leave on the heat until the kernels begin to pop. Once they start popping, keep a sharp eye on them and shake the pan regularly to prevent the already popped kernels from burning.

    Once the popping stops, remove the pan from the heat. Scoop the popped popcorn onto your prepared baking tray, taking care to remove any un-popped kernels as you do so as they can be a choking hazard.

    Break up the dark chocolate and place it in a microwave safe bowl.

    Melt the chocolate in the microwave in 30 second bursts, stirring between each one to ensure it melts evenly. Be careful not to overheat or burn the chocolate, heat only until just melted and smooth.

    Use a spoon to drizzle the dark chocolate all over the popcorn mixture, covering it as evenly as possible.

    Working quickly, sprinkle the chopped apricot and raisins all over the chocolate drizzled popcorn, spreading them out as evenly as possible.

    Place the candy eyeballs one by one in patches of melted chocolate so that they stick in place and stay pointing up the right way.

    Place the tray of popcorn in the fridge to set for 15 minutes or so.

    Once hardened and set, break up the chocolate covered popcorn into smaller clumps and serve in a large bowl or paper cups.

    NOTE: This popcorn is best eaten fresh but will also keep for a few days in an airtight container – store in a cool dry place until ready to serve.
