It wouldn't be October in my house without these fun and easy clementine pumpkins!
I've been making these for years and popping them into my kids lunch boxes, snack boxes, and of course serving them up for fun and healthy Halloween party food.
Though it's not a new or unique idea (just check out Pinterest at this time of year to see what I mean!), I put my own spin on the classic orange pumpkins by switching out celery and instead using cucumber for the stalks.

There's only so far that fun food can go in persuading kids to eat healthy food and sadly my boys draw the line at celery, but cucumber is a perfectly acceptable substitution and keeps everyone happy in our house!
The nice thing about these fun fruit pumpkins is that they are allergy friendly so great for inclusive party food at this time of year.
They're also easy to make so you can get the kids to make them themselves - a great time saver for you and fun kitchen activity for them!
Easy Clementine Pumpkins
Ingredients (makes 4):
- 4 clementine oranges (or other easy-peelers)
- ¼ cucumber
Method:
Carefully peel a clementine, making sure that the inside stays intact and in one piece.
Cut short sticks from the slice of cucumber, leaving the skin on.
Push a cucumber stick into the top of the clementine to form a stalk.
Repeat with the remaining clementines until you have as many 'pumpkins' as you need.
Pack in a lunch box or serve up on a plate or platter.
