Today I've got a super-easy no-bake coconut bites recipe to share with you, and best of all, it's yeti themed!
Inspired by brand new film Smallfoot, these cute little edible yetis taste delicious and are sure to be a hit with the kids - why not get them involved with making their own too?
Smallfoot is an animated adventure for all ages, with an all-star cast and original music. The story turns a traditional myth upside down when a bright young yeti finds something he thought didn’t exist—a human! News of this 'smallfoot' throws the simple yeti community into an uproar over what else might be out there in the big world beyond their snowy village.
I’ve created a quick video so you can see just how easy these yummy yetis are to make. If you have any trouble loading the video below, click here to watch it on YouTube, and don’t forget to subscribe to the Eats Amazing YouTube channel while you are there for lots more easy recipes, tutorials and fun food ideas!
As well as this tutorial video, you’ll also find the full recipe and a printable recipe card further down this post.
I had a lot of fun creating this fun Yeti inspired recipe, and the whole family enjoyed taste testing them for me - they didn't last long!
This recipe is dairy free, gluten free so apart from the nuts, it's pretty allergy friendly too.
Serve up to your kids as a fun snack, treat, or even Yeti themed party food - this recipe would be perfect for a winter party!
Yeti No-Bake Coconut Bites
Ingredients (makes 12):
- 75g cashew nuts
- 200g desiccated coconut
- 2 Tbsp coconut oil
- 3 Tbsp honey
- 75g desiccated coconut
- 24 edible candy eyes
- 12 whole pecan nuts
Method:
Place the cashew nuts in a high speed blender or food processor, along with the desiccated coconut.
Pop the coconut oil into a small microwave-safe bowl and heat in the microwave for 15 seconds at a time until melted.
Pour the coconut oil into the blender, along with the honey.
Whizz everything together until finely chopped and well combined.
Turn the mixture out into bowl, then take walnut sized pieces of the mixture, firmly press it together and roll it into balls.
Roll each ball in the extra desiccated coconut to coat then place on a small lined baking tray or plate.
Cut each pecan nut into horn-shaped slices, then push two into each ball for the Yeti horns.
Finish the Yetis by gently pressing 2 candy eyes into the top of each one.
Place in the fridge for an hour until completely chilled through and set.
Enjoy!
