As I mentioned in my last post, we've been busy creating several delicious child friendly Valentines treats and snacks this week and today I have a gorgeously simple but oh so delicious Valentines popcorn recipe to share with you. This popcorn has got it all - mini marshmallows, strawberries, white chocolate and sprinkles, it's a really lovely treat that the whole family can enjoy!
This recipe is really simple but doesn't it look pretty? It was certainly a hit with my boys! The popcorn is really fun to make on the stove top, it only takes a few minutes and I’ve found that my children love watching it and squealing with excitement as each kernel pops. It's even more fun if you have a saucepan with a glass lid as you can see if bouncing around inside!
This popcorn is a lovely treat for a family movie night or you can bag it up to give out to friends and family for Valentines day - I know I'd prefer an edible gift over flowers any day! It's pretty enough on it's own to just pop in a plain cellophane bag, but a pretty pink or red ribbon would be a lovely finishing touch.
White Chocolate Strawberry Valentines Popcorn
Ingredients:
- 1 tsp coconut oil
- 75g popping corn kernels
- 30g mini marshmallows
- 18g bag freeze dried strawberries
- 120g white chocolate
- pink food colouring paste (optional)
- 1 tbs heart sprinkles
Method:
Line a small baking tray with grease-proof or baking paper.
Prepare the popcorn – you’ll need a saucepan with a tight fitting lid for this.
On a medium heat, melt the coconut oil in the saucepan until it is liquid. Measure out the popping corn kernels, add to the pan and shake to coat in the oil.
Cover the pan and leave on the heat until the kernels begin to pop. Once they start popping, keep a sharp eye on them and shake the pan regularly to prevent the popped kernels from burning.
Once the popping stops, remove the pan from the heat. Scoop the popped popcorn onto your prepared baking tray, taking care to remove all unpopped kernels as you do so as they can be a choking hazard.
Sprinkle the mini marshmallows over the popcorn, spreading them out as evenly as possible.
Roughly chop any larger pieces of the freeze dried strawberries and sprinkle them all over the popcorn too.
Break up the white chocolate and place it in a microwave safe bowl.
Melt the chocolate in the microwave in 30 second bursts, stirring between each one to ensure it melts evenly. Be careful not to overheat or burn the chocolate, heat only until just melted and smooth.
Use a spoon to drizzle half of the white chocolate all over the popcorn mixture, covering it as evenly as possible.
Working quickly, add some pink food colouring paste to the rest of the chocolate and stir to combine. Drizzle over the popcorn mixture as before, covering it as evenly as possible.
Finish with the heart sprinkles.
Place the tray of popcorn in the fridge to set for 15 minutes or so.
Once hardened and set, break up the chocolate covered popcorn into smaller clumps and serve in a large bowl or paper cups.

NOTES: This popcorn is best eaten fresh but will also keep for a few days in an airtight container – store in a cool dry place until ready to serve.
Make sure you use a food coloring paste or powder to colour the chocolate as gel or liquid food colouring will make the chocolate seize up.
