With a week to go until Halloween, this blog is about to get very busy! I've spent the last week and a half in bed with a nasty dose of flu so my carefully planned blog schedule of fun Halloween food ideas and recipes is somewhat in tatters!
Before I was taken ill I had already tested and photographed a whole pile of spooky Halloween recipes for this year so I hope to get them all published for you over the next week.

I'm starting today with this incredibly easy but super fun recipe for apple ghosts. I can't explain how I come up with many of my fun food ideas, so often they just jump out at me from ordinary foods, and that was certainly the case with these fun ghostly apples!
With only 3 simple ingredients, you might already have everything you need to make these in your kitchen right now. The simple shape of the apple rings makes for some perfectly comical ghostly faces - all you need is a block of white chocolate and some candy eyeballs to turn them into edible spooks.
Ghostly Apple Bites
Ingredients (makes 15):
- 100g white chocolate
- 15 dried apple rings
- edible candy eyeballs
Method:
Line a baking tray or plate with grease proof or baking paper – be sure to check that it will fit in your fridge first.
Break up the white chocolate and place it in a microwave safe bowl.
Melt the chocolate in the microwave in 30 second bursts, stirring between each one to ensure it melts evenly. Be careful not to overheat or burn the chocolate, heat only until just melted and smooth.
Working quickly, dip half of each apple ring into the white chocolate to coat.
Place on the lined tray, then repeat until you have dipped as many apple rings as you require.
Once all of the apple rings have been dipped in the white chocolate, carefully place 2 candy eyeballs on the chocolate dipped part of each apple ring to turn them into ghosts.
Pop the tray of apple ghosts in the fridge for 10-15 minutes until completely set.
Carefully peel from the baking paper and serve on a plate or platter, or wrap in cellophane bags for cute Halloween party favours.

Notes: This recipe can be made several days in advance - once set, pop in an airtight container and store in cool dry place until ready to serve.
Though I tend to bulk buy candy eyeballs for my fun food creations I realise that’s probably not entirely normal behaviour (or is it?!), so if you don’t have any to hand but want to make this recipe, try using dark chocolate chips for eyes instead.
