This quick and easy sweetcorn salad recipe with simple honey lime dressing makes a great kid-friendly side dish for family meals, BBQs and summer picnics!
Today I have a lovely new side dish recipe for you that's perfect for family meals and barbeques this summer! This easy sweetcorn salad includes a rainbow of veggies and a sweet mild honey lime dressing that kids will love.
This easy salad recipe takes less than 10 minutes to prepare so it's great for a quick and healthy side dish to go with mid-week meals. It lasts a few days in the fridge too so it's great for prepping in advance.
Why not get the kids involved in making this yummy sweetcorn salad - I always find my boys are much more likely to eat a dish if they've helped to prepare it themselves!
Younger kids can help drain the sweetcorn, de-seed the pepper, mix the salad ingredients and whisk up the dressing, and older kids can help with the measuring and chopping too.
Easy Sweetcorn Salad
Ingredients:
- 2 x 200g tins sweetcorn
- ½ orange pepper
- 100g cucumber
- 100g baby plum tomatoes
- 2 spring onions
For the dressing:
- 1 Tbsp lime juice
- 1 Tbsp olive oil
- 2 tsp honey
Method:
Prepare the vegetables: drain and rinse the sweetcorn, de-seed and finely cube the pepper, finely cube the cucumber, ¼ the tomatoes, trim and chop the spring onions.
Place all the vegetables in a large bowl and mix together until well combined.
Place the dressing ingredients in a small bowl or glass and whisk until combined.
Drizzle the dressing over the salad and mix again to coat the vegetables.
Cover and pop in the fridge until ready to serve.
If properly covered and chilled, this salad will keep for 2-3 days in the fridge.
