This gorgeous Star Wars Galaxy cupcakes recipe is easy to make and perfect for Star Wars themed party food for kids!
Following on from this morning's cheese and cracker TIE Fighters recipe, I have a second recipe to celebrate Star Wars Day to share with you today - quick and easy Star Wars galaxy cupcakes!
I made these easy Star Wars cupcakes for my son's birthday party last year - it was in the summer so a socially distanced picnic was enjoyed by all and cupcakes seemed the safest option to share out rather than a big cake. He did also enjoy a Star Wars Death Star cake at home too, so he got the best of both worlds!
If you're not an experienced cupcake decorator, please don't be put off by the multi-coloured swirls on these cupcakes - they are SO easy to achieve, I promise! You'll find all the instructions below along with step by step photos so hopefully you'll be willing to give them a go!
I made a mixture of vanilla and chocolate cupcakes, so I've shared the vanilla cupcake recipe below, and instructions to convert them into chocolate cupcakes in the notes, so you can choose which flavour you would prefer. If you're feeding a crowd at a party, why not make two batches as I did - one of each!
Star Wars Galaxy Cupcakes
Ingredients (makes 12):
- 175g softened butter (or dairy free spread)
- 175g golden caster sugar
- 3 large eggs
- 175g self raising flour
- 1 Tbsp milk (or dairy free alternative)
- 2 tsp vanilla extract
To decorate:
- 150g softened butter
- 300g icing sugar
- 2-3 Tbsp milk
- 1 tsp vanilla extract
- black, purple, green and blue gel food colourings
- silver edible glitter spray
- mixed metallic sprinkles
Method:
Preheat oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with 12 muffin cases.
Place the butter or dairy free spread into a mixing bowl and whisk together with the caster sugar until light and fluffy. Break the eggs into a bowl and lightly whisk with a fork. Add the eggs a little at a time to the butter and sugar mix, whisking in between.
Sift the flour (and cocoa powder if using) on top, and using an electric whisk on a low speed, gently blend the ingredients together. Add the milk and vanilla extract and blend again. Increase the mixer speed and whisk for a few more seconds until well mixed.
Divide the cake mixture between the 12 cupcake cases and smooth over the tops with the back of a spoon. Bake for 20-25 minutes until risen and springy to the touch.
Once the cakes are cooked, transfer to a wire rack to cool.
Whilst the cakes are cooling, make the buttercream icing:
Whisk the butter with an electric whisk until light and fluffy. Sift in the icing sugar, a little at a time, until completely combined.
Add the vanilla extract and whisk again. Add the milk in small splashes until the icing is at the correct consistency for piping.
Divide the buttercream icing between 4 bowls. Colour them blue, green, purple and black (tip for black coloured buttercream icing - try adding some cocoa powder to darken it before colouring, this will reduce the amount of black food colouring needed).
Pop a piping bag with a closed star piping tip into a large glass and spoon the buttercream icing into it, spreading the icing up the sides, alternating the different colours as you go.
It doesn't have to be particularly neat, just blocks of different colours - all the cupcakes will come out slightly different to each other.
Once completely cool, pipe a swirl of coloured buttercream onto each cupcake.
Spray the decorated cupcakes with the edible glitter to add some shimmer (this makes a real difference to the wow factor of these cupcakes!).
Top with generous sprinkles of a metallic sprinkle mix.
You can also add Star Wars themed cupcake toppers if you have them.
Serve and enjoy!
Note: To make chocolate cupcakes, add 50g cocoa powder in with the flour and an extra tablespoon of milk to the recipe.
