This gorgeous Star Wars Galaxy cupcake recipe is easy to make and perfect for Star Wars themed party food for kids!

Ingredients
For the cupcakes:
175gsoftened butteror dairy free spread
175ggolden caster sugar
3large eggs
175gself raising flour
1Tbspmilkor dairy free alternative
2tspvanilla extract
To decorate:
150gsoftened butter
300gicing sugar
2-3Tbspmilk
1tspvanilla extract
blackpurple, green and blue gel food colourings
silver edible glitter spray
mixed metallic sprinkles
Instructions
Preheat oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with 12 muffin cases.
Place the butter or dairy free spread into a mixing bowl and whisk together with the caster sugar until light and fluffy. Break the eggs into a bowl and lightly whisk with a fork. Add the eggs a little at a time to the butter and sugar mix, whisking in between.
Sift the flour (and cocoa powder if using - see notes) on top, and using an electric whisk on a low speed, gently blend the ingredients together. Add the milk and vanilla extract and blend again. Increase the mixer speed and whisk for a few more seconds until well mixed.
Divide the cake mixture between the 12 cupcake cases and smooth over the tops with the back of a spoon. Bake for 20-25 minutes until risen and springy to the touch.
Once the cakes are cooked, transfer to a wire rack to cool.
Whilst the cakes are cooling, make the buttercream icing:
Whisk the butter with an electric whisk until light and fluffy. Sift in the icing sugar, a little at a time, until completely combined.
Add the vanilla extract and whisk again. Add the milk in small splashes until the icing is at the correct consistency for piping.
Divide the buttercream icing between 4 bowls. Colour them blue, green, purple and black (tip for black coloured buttercream icing - try adding some cocoa powder to darken it before colouring, this will reduce the amount of black food colouring needed)
Pop a piping bag with a closed star piping tip into a large glass and spoon the icing into it up the sides, alternating the different colours as you go.
Once completely cool, pipe a swirl of coloured buttercream onto each cupcake.
Spray the decorated cupcakes with the edible glitter to add some shimmer. Top with generous sprinkles of a metallic sprinkle mix.
You can also add Star Wars themed cupcake toppers if you have them.
Notes
Note: To make chocolate cupcakes, add 50g cocoa powder in with the flour and an extra tablespoon of milk to the recipe.
