This quick and easy sweetcorn salad recipe with honey lime dressing makes a great kid-friendly side dish for family meals, BBQs & summer picnics!

Ingredients
2x 200g tins sweetcorn
½orange pepper
100gcucumber
100gbaby plum tomatoes
2spring onions
For the dressing:
1Tbsplime juice
1Tbspolive oil
2tsphoney
Instructions
Prepare the vegetables: drain and rinse the sweetcorn, de-seed and finely cube the pepper, finely cube the cucumber, ¼ the tomatoes, trim and chop the spring onions.
Place all the vegetables in a large bowl and mix together until well combined.
Place the dressing ingredients in a small bowl or glass and whisk until combined.
Drizzle the dressing over the salad and mix again to coat the vegetables.
Cover and pop in the fridge until ready to serve.
Notes
If properly covered and chilled, this salad will keep for 2-3 days in the fridge.
