    Cucumber and Tomato Crowns

    Ingredients (makes 8 crowns):

    • ½ cucumber
    • 2 tomatoes

    Method:

Wash and pat dry the tomatoes and cucumber.

Trim the end off the cucumber and discard then cut the remaining cucumber into two equal sized pieces.

Using a small sharp knife, divide one of the cucumber piece in half again by cutting from the outside into the centre in a zig-zag pattern. Pull the two pieces of cucumber apart – they should look like crowns. Repeat with the other piece of cucumber until you have 4 cucumber crowns.

Cut each tomato in half using the same zig-zag technique to create four tomato crowns.
