This bright green monster easy pesto pasta recipe served with cheese and tomato edible eyeballs makes a fun and healthy Halloween meal for kids!
Today I have another fun and healthy Halloween dinner recipe to share with you. You won't believe how easy this green monster spaghetti is to make and it's a great way to encourage your kids to eat up their veg!
The simple child friendly creamy pesto pasta sauce takes just a minute or two to whip up, then it's tossed through hot spaghetti and topped with yummy cheese and tomato eyeballs for a spooky Halloween meal the kids are sure to love!
I am so pleased that my fussy six year old absolutely loved this easy pesto recipe. He's a tough customer when it comes to eating his veg, it often takes a lot of persuasion to even get him to try a mouthful of cooked veggies, but he wolfed this spinach filled meal down without a second's hesitation!
He does love all the fun of Halloween season so selling it as monster spaghetti was definitely the way to go with him, but I know he'll enjoy this bright green pasta again now that he's tried it so I'm chuffed to now have another quick and easy weeknight meal in my arsenal!
Monster Spaghetti with Cheese & Tomato Eyeballs
Ingredients:
- 2 cloves garlic
- 50g cashew nuts
- Large handful fresh basil
- 75g grated parmesan cheese
- 3 Tbsp olive oil
- 150ml double cream
- 1 Tbsp lemon juice
- pinch salt
- 200g spinach leaves
To serve:
- 300g tagliatelle pasta
- 12 round cherry tomatoes
- 24 mozarella pearls
- 2 raw spinach leaves
Method:
Cook the pasta following packet instructions (I used tagliatelle pasta for a chunkier dish but normal spaghetti would work just as well).
Peel the garlic cloves and place in a blender along with the cashew nuts, fresh basil, parmesan cheese, olive oil, double cream, lemon juice and salt. Blend together, then add half of the spinach leaves and blend again. Add the remaining spinach leaves and blend again until completely smooth.
Once the pasta is cooked, drain and return to the saucepan.
Pour over the bright green spinach sauce and mix together until the pasta is completely coated.
Serve the monster spaghetti in bowls and top with the tomato and mozzarella monster eyeballs (see instructions to make these below).
How to make Cheese and Tomato Eyeballs
Slice the cherry tomatoes in half and scoop out the pips with a teaspoon.
Place a mozzarella pearl into each tomato half, round side up.
Using a tiny circle cutter or the end of a straw, cut circles from the raw spinach leaves.
Add one tiny spinach circle to the top of each mozzarella pearl to make eyeballs.
Use to top bowls of monster spaghetti.
Serve immediately and enjoy!
