This fun and easy Spider Web Soup features a delicious easy pumpkin soup recipe topped with a fun and easy yogurt spider web for a spooky Halloween recipe kids will love!
Halloween is fast approaching and I've got so many new spooky recipes I want to share with you before the big day! Today's recipe makes a lovely healthy Halloween meal and a nice break from all the sweet treats that are around at this time of year.
This delicious pumpkin soup is perfect for warming up before or after a spot of trick or treating and you can easily make it extra fun by piping on a spooky yogurt spider web before serving - it only takes a minute and it's much easier to do than you might think!
You can make this soup a couple of days in advance (once cooked, cool quickly and store in the fridge until ready to heat up) and it freezes beautifully too, so it's a great make ahead meal for the whole family.
The spooky spider web topper is completely optional of course, but it goes a long to adding some spooky fun to a plain bowl of fun!
Spider Web Pumpkin Soup
Ingredients (serves 4):
- 2 small onions
- 1 Tbsp olive oil
- 1 cooking pumpkin or medium sized butternut squash
- 2 large carrots
- 1 Tbsp mild curry powder
- 2 vegetable stock cubes
To serve:
- 150ml natural yogurt
Method:
Peel and roughly chop the onion.
In a large saucepan, heat the olive oil then gently cook the onions over a low-medium heat until translucent.
Meanwhile, de-seed, peel and chop the pumpkin or squash into rough cubes. Peel the carrot and roughly chop.
Add the pumpkin and carrot to the pan and cook for 5 minutes.
Add the curry powder and cook for a further minute or so until fragrant.
Crumble in the two stock cubes and pour over boiling water to just cover the vegetables.
Bring to the boil and cook for 15-20 minutes until the vegetables are cooked through.
Whizz with a stick blender until smooth. You can add a little more hot water if the soup is too thick for your liking and blend again.
When ready to serve, ladle into bowls and top with a spooky yogurt spiderweb if wanted (see instructions below).
How to make a spooky spiderweb soup topper
Ladle your pumpkin soup into bowls.
Spoon natural yogurt into a disposable piping bag or freezer bag.
Snip off the corner, then pipe a spiral of yogurt onto the top of each bowl of soup.
Working from the middle, drag a cocktail stick through the surface of the soup to create a spider web effect.
Serve immediately and enjoy - toy spiders optional!
