    Fruit and Nut Yogurt Bites Recipe

    Today I'm sharing a really yummy recipe that is my new favourite healthy snack - Fruit & Nut Frozen Yogurt Bites!

    I've been making a real effort to improve my diet recently - with all the stress of buying our first house, the subsequent big house move a few weeks ago and the continuing house renovations my healthy habits have rather gone down the pan in recent months, and we have definitely eaten one too many takeaways, so I'm on a mission to clean up our diet and get healthy eating back on track for the whole family.

    These delicious fruit and nut yoghurt bites make a fun healthy snack for the whole family - just 5 easy to find ingredients

    Whilst it's been easy enough to get back into the habit of cooking healthy family meals, snacking has always been my downfall, so I created these healthy fruit and nut yogurt bites as a delicious little treat to grab and go whenever we need a little something between meals.

    They have been a huge hit with everyone (apart from the dairy free Mr Amazing of course, but I plan to try a dairy free version with soya yogurt for him soon), the first batch vanished the first day I made them so I soon had to make some more! They're a great one to make with kids - even a toddler could get stuck in and help with this recipe.

    You can customise these yummy yogurt bites however you like - use a flavoured yogurt (although I prefer to use natural yogurt for a refined sugar free treat, or Greek yogurt for an extra protein boost), try different dried fruits or fresh fruit or swap the flaked almonds for another nut of your choice - there are endless possibilities!

    Fruit and Nut Yogurt Bites

    Ingredients:

    • 200g Greek yogurt
    • drizzle of honey to taste
    • 2 tbs desiccated coconut
    • 25g flaked almonds
    • 60g raisins

    Method: 

    Line a baking tray or plate with grease proof or baking paper. Be sure to check that the tray or plate will fit in your freezer before starting!

    Pop the yogurt into a bowl and drizzle over a little honey to taste. Stir until the yogurt and honey are completely combined.

    Drop spoonfuls of the yogurt mixture onto a baking tray and  spread out a little with the back of the spoon to create circles of yogurt.

    Sprinkle over the desiccated coconut, flaked almonds and raisins and gently push them into the yogurt circles with your fingers.

    Put the tray into the freezer and freeze for two hours or overnight. Once frozen solid, peel away from the paper and server or store in an airtight tub or freezer bag until ready to eat.

      Looks delicious. Does one have to eat the bites within a certain timeframe when taken out of the freezer?

        Hi Elle, I would recommend eating them fairly quickly as they will melt and revert to liquid yogurt if left out for too long.
