    Fun Food Tutorial - Carrot & Cucumber Coins

    I always pack some fresh vegetables in my son's lunch boxes, but whilst he's a great little eater and enjoys most foods, the vegetables don't always get eaten! Here's a simple fun food idea that I like to use to improve the chances of him eating all of his veggies - yummy healthy carrot and cucumber coins.  When I take a little extra time to pack them like this, they almost always get polished off. It only takes a minute to do and the great thing is there is no waste as all the cut out pieces get used.

    Depending on the size of your cutters, you might need to keep an eye out for some nice fat carrots for this - I usually buy organic carrots and they often seems to be a bit bigger than the normal ones.

    Carrot and Cucumber Coins

    Ingredients:

    • ¼ cucumber
    • ½ carrot

    Method:

    Prepare the vegetables - wash the cucumber, peel the carrot.

    Cut as many round slices as you'd like from the cucumber, then cut off the same amount of carrot disks with roughly the same thickness.

    Taking some mini bento cutters (you'll find a selection in the Eats Amazing Shop, my favourites are the alphabet cutters, great for fun themed lunches!), and cut a shape from the centre of a carrot slice. Carefully remove the shape from the cutter, and set to one side.

    Using the same cutter, cut a shape from the centre of a cucumber slice. Remove the shape, then pop it into the hole in the carrot slice. Take the carrot shape and pop it into the hole in the cucumber.

    Repeat until all of the carrot and cucumber slices have swapped middles - fun!

    Pack in a lunch box or snack box - these are a great little snack for when you're out and about, I try take healthy snacks with me for the kids to avoid the temptation of buying something less.
