How to make your own instant pancake mix recipe for fluffy American-style pancakes - an easy eco-friendly and plastic free alternative to ready made mixes.
Have you ever bought an instant pancake mix from the supermarket? Today I'm going to show you how to make your own instant pancake mix instead - it's so easy to put together and brilliant to have ready to go whenever you fancy a batch of yummy American-style pancakes!
Pancake Day is next week and the supermarkets are full of displays packed with pancake ingredients, mixes and topping ideas. With all the focus on single use plastics and plastic waste at the moment, it struck me that the pancake mix shaker bottles (that you just add water to) are a particularly pointless single use plastic product.
My homemade instant pancake mix does still need a couple of extra ingredients to be added (one egg and some oil) but it's plastic free so much more eco-friendly, and very little extra effort required!
This recipe makes enough pancake mix for 5 batches of pancakes. When testing this recipe, I found that each batch made approx. 8 good-sized American style pancakes.
You could also use it to make mini pancakes - why not serve them on skewers along with chunks of fresh fruit as I did with my fruity mini pancake stackers or strawberry heart topped mini pancake stacks!
DIY Easy Instant Pancake Mix Recipe
Ingredients:
For the dry pancake mix (makes 5 batches of pancakes):
- 600g plain flour
- 150g dried milk powder
- 40g golden caster sugar
- 3 Tbps baking powder
- 2 tsp bicarbonate of soda
- 1 tsp salt
For 1 batch of pancakes:
- 165g dry pancake mix
- 1 large egg
- 2 Tbsp coconut oil + extra for frying
- 150ml water
Method:
Weigh out all of the dry pancake mix ingredients and place them in a large bowl.
Mix them together really well until fully combined.
Pour the mix into a large glass jar or air-tight container to store.
To make 1 batch of pancakes:
Weigh out 165g of the dry pancake mix into a large bowl.
Break 1 large egg and lightly whisk.
Melt the coconut oil and add to the dry pancake mix along with the whisked egg and 150ml of water.
Lightly whisk everything together until just combined.
Heat a frying pan on the hob until hot. Add a little coconut oil and swirl it around the pan.
Drop heaped spoonfuls of the pancake mixture into the pan and spread around a little with the back of the spoon to make round pancakes. Note: I found it easiest to make 2 pancakes at a time.
Cook until bubbles appear on the surface of the pancakes, then carefully flip over and cook on the other side until golden brown.
Remove from the pan and pop on a plate, then repeat until you have used up all the pancake mix.
Serve your pancakes with fresh fruit and a drizzle of maple syrup, yum!

Note: If you don't have coconut oil, you can use vegetable oil as a substitute.
