This easy snickerdoodle cookies recipe is quick and easy to make - these yummy snickerdoodles take just 20 minutes to prepare and bake!

Inspired by the comedy film Daddy's Home 2, today I'm sharing my super easy recipe for homemade snickerdoodle cookies.  In the film, the stepdads work together to create the ultimate snickerdoodles, and now you can try making them yourself with my simple snickerdoodles recipe.

They'd be the perfect snack accompaniment for a movie night at home, especially as Daddy's Home 2 is out now on Blu-ray, DVD and Digital!

They might look complicated to make, but these snickerdoodles are actually a really simple vanilla cookie, rolled in cinnamon sugar before baking for an absolutely delicious treat that you just have to try!

There appears to be some debate on the origins of the snickerdoodle, as they are popular in the US and Canada, but may well have their roots in Germany. Whoever it was that created the first snickerdoodle cookie, in my opinion they deserve a whole pile of medals for their wonderful contribution to mankind!

    Dusty's Easy Snickerdoodle Cookies

    Ingredients: (makes 24)

    • 150g butter (room temperature)
    • 100g golden caster sugar
    • 30g soft dark brown sugar
    • 1 egg yolk
    • 1 tsp vanilla extract
    • 185g self-raising flour

    For the cinnamon coating:

    • 2 Tbsp caster sugar
    • 2 tsp cinnamon

    Method:

Preheat the oven to 180°C (Gas mark 4/350°F). Line two large baking trays with grease-proof or baking paper

Whisk the butter, sugars and egg yolk together in a large bowl until fluffy.

Add the vanilla extract and whisk until well combined.

Add the self-raising flour, whisk until just combined, then pull together with your hands to form a dough.

Split the cookie dough mixture into 24 roughly equal pieces, (each around one flat tablespoon in size), then roll each piece into a ball.

Mix together the caster sugar and cinnamon in a small bowl.

Roll the cookie balls around in the cinnamon sugar and place on the baking tray, leaving plenty of space in between each on for spreading.

Bake the cookies for 10-12 minutes, then remove from the oven and leave the cookies on the tray to cool.

    Enjoy!

Note: Once completely cool, cookies can be stored in an airtight container for up to 3 days.
