Today I have a fun treat recipe for you for teeny tiny mini rainbow cookies! These tiny cookies were a big hit with my boys, both making them and eating them. This recipe was inspired by a gorgeous book that we were sent by the lovely Anna from The Imagination Tree recently. It's based on her Kindness Elves (If you haven't seen them yet, go have a look, they are such a lovely tool to encourage children to be kind and think about others!) and has fast become a favourite bed time story, especially for my 3 year old.
We were offered the chance to review the book and my little one loved it so much that I just had to buy some kindness elves to go with it too. The boys were over the moon when the elves and their house mysteriously appeared on their windowsill, just like in the book! The book itself is just lovely, with beautiful watercolour illustrations helping to tell the story of the kindness elves and how they enlist the help of some children to spread joy and kindness through the world. There's even a kindness recipe hidden in a secret pocket in the book - I love little touches like this that make a book extra special.
In the book the elves eat little cookies for breakfast, so this is what inspired us to make some mini elf cookies for our own kindness elves. My boys love helping in the kitchen, especially when there's a sweet treat as the end result so we had a lot of fun making these mini rainbow cookies for the elves.
Teeny Tiny Mini Rainbow Cookies
Ingredients (makes 100 tiny cookies):
- 150g unsalted butter, at room temperature
- 120g golden granulated sugar
- 1 egg
- 2 tsp vanilla extract
- 220g plain flour
- ½ tsp bicarbonate of soda
- pinch salt
- 2 x 65g tub mini rainbow chocolate beans
Method:
Preheat the oven to 180°C (Gas mark 4/350°F). Line a couple of oven trays with non-stick baking paper.
Measure out the sugar and butter into a large bowl then beat with an electric whisk to combine.
Break the egg into the bowl and add the vanilla extract too. Beat again with the whisk to combine.
Sift in the flour, bicarbonate of soda and salt and gently fold in.
Pour in the mini rainbow chocolate beans and stir until they are evenly distributed throughout the dough.
Scoop up small pieces of the dough and roll into balls. I used a half tablespoon sized measuring spoon to keep my cookies evenly sized. You should get around 100 tiny cookies from the dough.
Place the balls of cookie dough on the baking trays, leaving plenty of space between them to allow for spreading. You may need to bake the cookies in two batches.
Bake in the oven for 5-8 minutes - keep a sharp eye on them as their small size means that these cookies are quite easy to burn.
Once cooked through and golden, remove from the oven and leave on the tray to cool for 5 minutes before transferring to a wire rack to finish cooling.
Store any leftover cookies in an airtight container, safe from little elf hands!
NOTES: This recipe makes around 100 mini cookies but if you're short on time for dividing it up or don't want quite that many, split the cookie dough in half and use the other half of the dough to make 12 full-sized cookies instead. You'll need to bake the larger cookies for a little longer, 8-12 minutes depending on your oven.
You can also store the uncooked dough in the fridge for up to two weeks. Leave out the rainbow beans and store in an airtight container. When you're ready to bake, stir through the rainbow beans, divide and roll the dough into balls and continue the recipe to bake as above.
We made a lot of cookies so our kindness elves got 'fed' them for breakfast for quite a few days after we baked them, and the boys did rather a lot of 'helping to taste them' too, of course! The mini size means that these cookies make perfect for little treats and they're great for popping in a lunch box too.
