Today I have a fun and healthy Easter recipe to share with you; cute and easy Easter Nest Bagels!
These fun bagels were inspired by my Healthy Easter Nests Snack idea, and are topped with nests made from crunchy vegetables - perfect for a fun and healthy Easter lunch or snack kids will love!
These fun Easter nest bagels are quick to make, super easy to put together and kids will love them, with or without the optional cute fluffy chicks on the side!
I used both hummus and cream cheese to make mine, as one of my boys loves his hummus and the other loves cheese, so as you can see they are very easy to customise for your own child's tastes. Hummus makes a great dairy free option too.
You could use other spreads as well - try my roasted carrot hummus, a garlicky soft cheese like Roulé or even peanut butter!
Healthy Easter Nest Bagels
Ingredients: (makes 4 bagel nests)
- 2 bagels
- 4 Tbs cream cheese or hummus
- 1 large carrot
- ¼ cucumber
Method:
First split each of the bagels in half. Pop the bagel halves into the toaster and toast until golden brown.
Spread your choice of hummus or cream cheese over the cut side of each bagel half.
Using a julienne peeler, cut the carrot into thin straw-like strips. If you don’t have a julienne peeler, you can also use a sharp knife to cut the carrot into really thin strips or you could even grate the carrot instead.
Arrange the carrot strips on top of each bagel half to form nest shapes. Depending on the size of your carrot, you may need to cut some of the strips in half to make this easier.
Cut egg shapes from the cucumber slices using a round or oval shaped mini bento cutter.
Place three of the cucumber eggs into the centre of each bagel nest.
Serve immediately, and enjoy!
Note: If making for an Easter gathering, get ahead by cutting the carrot strips and cucumber eggs, storing them in the fridge in a plastic bag or air-tight box up to a day in advance.
