This recipe uses a super simple tomato ketchup, honey and soy sauce marinade, the perfect way to showcase the delicious new Tomato Ketchup Sweetened with Honey from Hellmann's. Hellmann's is championing real taste and quality ingredients and that's clear to see in the ingredients list for their new ketchup, which is refreshingly short with no strange unpronounceable ingredients! It's made with sustainably sourced tomatoes and natural ingredients and is sweetened only with honey.
Like many children, my boys love their tomato ketchup and if they had their way they'd have it on practically everything! We do try to limit their ketchup consumption a bit because it's traditionally quite high in sugar, so it's great to see that Hellmann's Tomato Ketchup Sweetened with Honey contains 30% less sugar than the market leader standard tomato ketchup. I'm pleased to be able to relax a bit and let the boys enjoy it a bit more from now on. I was pleasantly surprised with the taste myself too, I've always stuck to the same brand of ketchup but after tasting Hellmann's I'm a convert! It's so tomatoey (is that even a word?!) so I wasn't surprised to notice on the label that it has 36% more tomatoes too.
Back to the chicken skewers, this recipe really is easy, so perfect for a quick midweek meal or a weekend feast alike! The marinade is super simple to make, and once you've threaded the chicken onto skewers you just pop it in the oven to bake, no hovering over the grill necessary. I added cherry tomatoes to ours for even more tomato taste, but if you're not a fan then you can miss them out or swap them for another vegetable - onion, peppers or courgette all work well instead.
Oven Baked Tomato Ketchup Chicken Skewers
Ingredients:
- 4 Tbs Hellmann's Ketchup Sweetened with Honey
- 2 Tbs soy sauce
- 2 Tbs honey
- 1 tsp garlic granules
- 2 tsp mixed herbs
- 650g chicken breast
- 300g cherry tomatoes
Method:
Start by making the marinade. Measure the Hellmann's Ketchup, soy sauce, honey, garlic granules and mixed herbs into a bowl and whisk together with a fork until well combined.
Cut the chicken breast into bite-sized chunks and place in a large dish. Pour over the marinade and mix until the chicken is completely coated. Cover and place in the fridge to marinade for ½ hour - 2 hours.
Preheat the oven to 200°C (Gas mark 6/400°F). Line 2 baking trays with grease-proof paper.
Thread the cherry tomatoes and chicken onto bamboo skewers, alternating one tomato with 2-3 chunks of chicken. Reserve any remaining marinade.
Place the skewers on the prepared baking trays then place in the oven to bake. After 10 minutes, remove from the oven and brush the remaining marinade over the chicken and tomatoes. Return to the oven and bake for a further 15 minutes until the chicken is cooked through.
Serve hot with flatbreads or pitta breads, Hellmann's Light Mayo, lettuce, sliced cucumber and tomatoes.
Notes: Pop any leftovers into the fridge and enjoy cold for lunch the next day.
