    Healthy Fruity Prawn Fried Rice Recipe

    Today I'm sharing one of our favourite family friendly healthy dinner recipes - fruity prawn fried rice.  This recipe is really easy to prepare (it's a great one for kids to help cook) and has always been a big hit with kids and adults alike!

    I love cooking meals like this for family dinners, because the leftovers are perfect for packing for lunches the next day.  I've been known to scale this recipe down and make it for my own lunch at home too, and you can use leftover rice, which is great for speeding up the cooking time!

    Fruity Prawn Fried Rice

    Ingredients

    • 300g basmati rice
    • 1 tsp turmeric
    • 1 tbs olive oil
    • 1 red pepper
    • 1 red onion
    • 150g frozen peas
    • 200g cooked prawns
    • 80g raisins
    • 150g seedless grapes
    • 1 200g tin sweetcorn
    • 1 spring onion
    • 2 tbs soy sauce

    Method

    Add the rice and the turmeric to a large pan of boiling water and cook as per the packet instructions.

    While the rice is cooking, finely chop the onion and red pepper. Heat the oil in a large pan, and gently fry the onion and pepper until soft.

    Add the peas to the pan and gently fry until the peas have defrosted and warmed through. Take off the heat until the rice has finished cooking.

    Drain the rice and add it to the pan with the rest of the ingredients.  Stir well to mix together, then season with salt and pepper to taste.

    Serve warm or cool down quickly and store in the fridge until needed.

    Leftovers of this rice really are delicious for lunch the next day, do be sure to cool it down and keep it in the fridge, and pop an ice pack in with a lunch box if transporting anywhere.
