Ingredients
300gbasmati rice
1tspturmeric
1tbsolive oil
1red pepper
1red onion
150gfrozen peas
200gcooked prawns
80graisins
150gseedless grapes
200gtin sweetcorn
1spring onion
2tbssoy sauce
Instructions
Add the rice and the turmeric to a large pan of boiling water and cook as per the packet instructions.
While the rice is cooking, finely chop the onion and red pepper. Heat the oil in a large pan, and gently fry the onion and pepper until soft.
Add the peas to the pan and gently fry until the peas have defrosted and warmed through. Take off the heat until the rice has finished cooking.
Drain the rice and add it to the pan with the rest of the ingredients. Stir well to mix together, then season with salt and pepper to taste.
Serve warm or cool down quickly and store in the fridge until needed.
Notes
NOTES: Leftovers of this rice really are delicious for lunch the next day, do be sure to cool it down and keep it in the fridge, and pop an ice pack in with a lunch box if transporting anywhere.
