Easy English Muffin Pizza Recipe

Today I'm sharing a really easy English muffin pizza recipe.  

This post is part of my Easy Recipes for Kids series, so at the end of the post you'll find a free printable recipe sheet that you can download and keep if your child wants to have a go at making these simple pizzas themselves.

Pizza is always a massive hit in our house, and as Mr Amazing can't have dairy we almost always have to make it ourselves from scratch, with goats cheese for him. Whilst I do love making my own pizza dough, sometimes I want something really quick and easy and that's where these English muffin pizzas come in.  

These are so easy that Small Child has been quite capable of making them himself for some years now, so I thought this would be a great child-friendly recipe to share here on the blog.

Even toddlers can get involved with this one, helping to pull the seeds out of the pepper for example, and sprinkling cheese and toppings.

Older children can follow the whole recipe themselves from start to finish,  and they'll get a great boost of confidence when they realise they've cooked it all themselves!

5 minute English muffin pizza recipe from Eats Amazing UK - so quick and easy! With free printable recipe for kids - build confidence in the kitchen!

 

Ingredients (makes 4 mini pizzas)

  • 2 English Muffins
  • 1 tbs Tomato puree
  • 3 or 4 cherry tomatoes
  • ½ red pepper
  • handful mozzarella or cheddar cheese – grated

Method

Preheat your oven to 180°C/350°F/Gas Mark 4.  Split each muffin into two to make the pizza bases.  Spread a thin layer of tomato puree over the cut sides of the muffins and place on a baking tray.

Using mini bento cutters or a sharp knife, cut some fun shapes from the red pepper and set aside (we used hearts as it was close to Valentines Day at the time). Chop the remaining red pepper as finely as you can and sprinkle it over the pizza bases.  Finely chop the cherry tomatoes and add to the pizzas too.

Sprinkle over the cheese and top each pizza with the red pepper shapes to decorate.  Bake in the oven for 5-10 minutes until the cheese is melted and bubbling.

Leave to cool for a few minutes then serve - we like to have a selection of veggie sticks and some light garlic mayo for dipping with ours.

These pizzas are also brilliant for lunch boxes! Make sure they're completely cool before packing in the box.
