    Easy Watermelon Cupcakes Recipe

    Today I'm sharing a really simple summer recipe that kids will love, for easy watermelon cupcakes! This recipe was inspired by the amazing watermelon cakes that I keep seeing on Pinterest - like this beautiful tiered watermelon cake from Apron Strings, or this no bake watermelon cake from iSave A to Z which is iced with whipped cream. I had no need for a big cake though, so decided to make child-sized cakes in the form of watermelon cupcakes instead.  These took just minutes to make, and would make a lovely party food idea for a summer garden party or BBQ!

    Watermelon Cupcakes Recipe from Eats Amazing UK - Cute kids food - perfect dessert for a summer party or BBQ

    Ingredients

    • ½ watermelon
    • 300ml fresh whipping cream
    • blueberries
    • dark chocolate chips

    Method

    Slice the watermelon into rounds about 2 cm thick.

    Using a small circle cutter, cut out cupcake sized circles of melon and set aside. You'll need two circles for each cupcake, so work in multiples of two. If making in advance, pop the watermelon circles into an airtight box and store in the fridge until ready to use.

    When you're ready to serve, whisk the cream until the cream forms thick peaks and is thick and fluffy.

    Working quickly, spoon the cream into a piping bag with a decorative tip of your choice.  If you pop the piping bag into a tall glass first you'll probably find it easier to fill.

    To build each cupcake, start by placing a circle of watermelon into a cupcake case.  Pipe a swirl of cream onto the watermelon and place a second circle of melon on top.  Pipe another swirl of cream on top and decorate with blueberries, dark chocolate chips or another topping of your choice (chopped nuts or sprinkles would also work well).

    Repeat until you have used up all of your circles of watermelon and serve immediately.

    As you can see below, Small Baby couldn't wait for me to finish taking photos and dived right in! These cupcakes were a massive hit with the children - they thought they were a really special treat - definitely a fun way to get one of their five a day inside them!
