This healthy blackberry yoghurt parfait recipe is a really easy recipe for using up blackberries. It has just 3 ingredients, all healthy and all yummy, so your children will think they're having a real treat whilst they're eating some lovely healthy food!
We're fortunate to live in an area that has a fantastic amount of blackberry bushes growing wild and we walk past lots of them on the walk to school and to town, so at this time of year we're often to be found foraging for the beautiful blackberries that grow on them. We eat them straight from the bush on a daily basis, but we also love to have a few good blackberrying sessions each year, when we prepare ourselves with long sleeves to avoid scratched arms, wellies to avoid the nettles and lots of tubs to hold the fruity bounty! Small Child and I went out on one of these annual trips yesterday, and despite scratching my hands to pieces, it was a great success as we came back with boxes and boxes of delicious blackberries!
I froze most of them (more on that in another post), but kept some back in the fridge for us to enjoy whilst they were still fresh. This evening after dinner, both boys were clamoring for 'blackberries for pudding' so I threw together this quick healthy dessert that was a big favourite with them both during last year's blackberry season.
Blackberry Yoghurt Parfait
Ingredients: (serves 2)
- 100g blackberries + extra to serve
- 1 tbs honey
- 300g natural yoghurt
Method
Wash the blackberries and place on a paper towel to dry off. Once dry, place them in a bowl and add honey to taste. I used a tablespoon full as it's quite early in the blackberry season here and the berries are still quite tart, but you could use a little less if you prefer.
Roughly mash the blackberries and honey together to make a rustic looking jammy sauce.
Layer the blackberry mixture in a tall glass or sundae dish with alternate spoonfuls of natural yoghurt. You could also pop it in a bowl for younger children and swirl it together with a skewer.
Top with a few blackberries to decorate, then serve immediately.
When I was making these, Small Child initially grumbled about the fact I was using natural yoghurt (he's gone off it a bit recently) but once he started eating he practically licked the glass clean, he enjoyed it so much!

Your parfaits look absolutely stunning. I defy anyone not to find them delectable. AND they are so simple - fabulous post. Sadly the blackberries down our way have all pretty much been ruined by the week of non-stop rain we had. I managed to forage a few at the weekend, but most were spoiled.
