Blackberry Yoghurt Parfait

Easy healthy blackberry yoghurt parfait recipe - just 3 ingredients, a great quick way to use up blackberries - healthy dessert idea for kids.

Ingredients

  • 100 g blackberries + extra to serve
  • 1 tbs honey
  • 300 g natural yoghurt

Instructions

  • Wash the blackberries and place on a paper towel to dry off. Once dry, place them in a bowl and add honey to taste. I used a tablespoon full as it's quite early in the blackberry season here and the berries are still quite tart, but you could use a little less if you prefer.
  • Roughly mash the blackberries and honey together to make a rustic looking jammy sauce.
  • Layer the blackberry mixture in a tall glass or sundae dish with alternate spoonfuls of natural yoghurt. You could also pop it in a bowl for younger children and swirl it together with a skewer.
  • Top with a few blackberries to decorate, then serve immediately.
