    Whole Roasted Sweet Potato Mash Recipe

    Today I'm sharing my no-fuss recipe for fool-proof easy mashed sweet potato.

    Sweet potato mash makes a great alternative to traditional mashed potato, not only is it a great source of vitamins (particularly vitamin A) but it's also sweet, delicious, very child friendly and, unlike normal potatoes, sweet potatoes count towards your five a day too.

    This method of making sweet potato mash really couldn't be easier. There's no peeling, chopping or boiling involved, the sweet potatoes are just popped whole in their skins in the oven to roast, and though they take a little longer to cook this way, the final result is totally worth the wait!  Once you try making sweet potato mash using this method you'll never want to make it any other way again!

    Whole Roasted Sweet Potato Mash

    Ingredients:

    • 3 medium-large sweet potatoes
    • 25g butter (optional)
    • salt & pepper to taste

    How to make whole roasted sweet potato mash - no chopping peeling or boiling - Eats Amazing UK

    Method:

    Preheat the oven to 200°C (Gas mark 6/400°F).

    Prick each potato all over with a fork then place the potatoes in a roasting tin or oven tray.

    Bake in the oven for 30 minutes, then turn all of the potatoes and return to the oven.

    Cook for a further 15-30 minutes until soft and cooked through.

    Remove from the oven and leave for a few minutes until cool enough to handle.

    Cut each potato in half and scoop out the flesh with a spoon. Discard the skins.

    Place all of the sweet potato flesh into a bowl and mash together with the butter.

    Season to taste and serve immediately.

    Garnish with freshly chopped chives if wanted, and serve with my maple mustard sausages and freshly steamed vegetables for a delicious family meal!
