Today I have a really delicious and super easy Lamb Biryani recipe to share with you. As you'll see in my recipe video further down this post, this recipe is easy enough for a child to cook (as proudly demonstrated by my 9 year old!) and it can be made even easier for you thanks to Gousto, a fantastic recipe box service that makes home cooking simple by delivering everything you need (fresh, wholesome ingredients and foolproof recipes), to cook and enjoy delicious family meals at home.
We received our first Gousto box last week, having chosen our recipes from the great selection available on the Gousto website. I must admit I'm quite an indecisive person and meal planning can take me ages, so it was amazing to be able to just decide on the recipes I fancied (and that I thought my children would be willing to eat!) and order in just a few clicks. Another bonus too - no dragging the kids around the supermarket, one of my least favourite parenting tasks!
I had over 20 recipes to choose from (the recipes change each week to keep things interesting) and the four recipes I chose included two Annabel Karmel recipes - Annabel's Mighty Meatball Pasta Bake & Annabel's Chinese-Style Fish Fillets - so I knew they would be particularly child friendly. Our box arrived as expected and I was really impressed with the quality and freshness of the ingredients. The food was packed really well, with cold ingredients like fish, meat and dairy carefully packed in an insulated bag with ice packs to keep them at their best. All of the meat is 100% British, the fish is sustainable and Gousto only provides free-range eggs. I was also impressed to discover that 93% of packaging used in Gousto's recipe boxes is recyclable or biodegradable (they're working on the rest!). All of the ingredients come pre-measured (and well labelled) so there's no food waste and you have exactly what you need for each meal. It made cooking family meals so much easier to have everything to hand with no weight and measuring necessary! I love to get the kids involved with cooking our meals when I can, and it was definitely a lot less stressful to have the ingredients ready and waiting when we needed them so our time spent cooking together was much more enjoyable.
My 9 year old wanted to try cooking one of the recipes himself and he chose to make the Lamb Biryani. This was such a quick and easy meal, it was ready in less than 20 minutes so a perfect mid-week meal for busy families. The recipe cards for all four of our recipes were clear and easy to follow and the meals were all delicious! We really enjoyed breaking out of a rut and trying new recipes as well. Easy Lamb Biryani
Ingredients (serves 4):
- 1 Tbsp vegetable oil
- 2 onions
- 2 Tbsp curry powder
- salt & pepper
- 500g lamb mince
- 2 chicken stock cubes
- 2 Tbsp tomato paste
- 300g basmasti rice
- 160g trimmed fine green beans
- 60g raisins or sultanas
- natural yogurt to serve
Method:
Prepare the vegetables; peel and dice the onions, cut the green beans in half.
Heat the oil in a large, wide-based pan (preferably non-stick) with a matching lid. Once hot, add the diced onion, curry powder and a pinch of salt and pepper. Cook for 2 minutes or until starting to soften.
Add the lamb mince to the pan and cook for 2 minutes, breaking it up with a spoon as it cooks.
Crumble in the chicken stock cubes and add the tomato paste. Cook for a further 2 minutes or until the lamb is starting to caramelise
Stir in the basmati rice, then add 700ml of cold water to the pan and bring to the boil.
Add the halved green beans and sultanas, then cover with a lid, reduce the heat to low and cook for 10 minutes or until the water is absorbed and the rice cooked (add a little water if the rice is not cooked or the mixture is too dry).
Once cooked, taste for seasoning, adding more salt and pepper if needed. Serve the lamb biryani with a dollop of natural yogurt on top
