Whole Roasted Sweet Potato Mash

Easiest ever sweet potato mash roasted whole in the skins - you'll never cook mashed sweet potato any other way after tasting this recipe!

Ingredients

  • 3 medium-large sweet potatoes
  • 25 g butter optional
  • salt & pepper to taste

Instructions

  • Preheat the oven to 200°C (Gas mark 6/400°F).
  • Prick over each potato with a fork then place the potatoes in a roasting tin or oven tray.
  • Bake in the oven for 30 minutes, then turn all of the potatoes.
  • Return to the oven and cook for a further 15-30 minutes until soft and cooked through.
  • Remove from the oven and leave for a few minutes until cool enough to handle.
  • Cut each potato in half and scoop out the flesh with a spoon. Discard the skins.
  • Place all of the sweet potato flesh into a bowl and mash together with the butter.
  • Season to taste and serve immediately.

Notes

Note: Garnish with freshly chopped chives, if wanted.
