Whole Roasted Sweet Potato Mash
Easiest ever sweet potato mash roasted whole in the skins - you'll never cook mashed sweet potato any other way after tasting this recipe!

Ingredients
3
medium-large sweet potatoes
25
g
butter
optional
salt & pepper to taste
Instructions
Preheat the oven to 200°C (Gas mark 6/400°F).
Prick over each potato with a fork then place the potatoes in a roasting tin or oven tray.
Bake in the oven for 30 minutes, then turn all of the potatoes.
Return to the oven and cook for a further 15-30 minutes until soft and cooked through.
Remove from the oven and leave for a few minutes until cool enough to handle.
Cut each potato in half and scoop out the flesh with a spoon. Discard the skins.
Place all of the sweet potato flesh into a bowl and mash together with the butter.
Season to taste and serve immediately.
Notes
Note: Garnish with freshly chopped chives, if wanted.
