Today I'm sharing a really easy and fun recipe with you! Served up on sticks, these cute little Cumberland sausage swirls are perfect for New Year's Eve, Bonfire Night or any other celebrations that call for fun fireworks themed food.
Back in October I had an absolutely gorgeous weekend away in Cumbria courtesy of Sally's Cottages and I've been meaning to share my spin on the classic Cumbrian sausage rings here on the blog ever since.
Whilst in Cumbria, I stayed in their beautiful Croft House along with a lovely group of bloggers and it was just perfect!
The cottage itself was lovely, clean and comfortable with six good sized bedrooms to sleep up to 12 people and all the space we needed, inside and out.
The kitchen was a little small when compared to the rest of the house, but we had no trouble cooking meals for the 9 of us and found everything we needed there.
The rest of the cottage was really roomy with plenty of comfortable furniture and an amazing HUGE dining table to seat us all - it really did feel like a home from home.
We were really lucky with the weather that weekend as the autumn storms started kicking in the week afterwards but Croft House was the ideal place to retreat from the world, whatever the weather.
I could wax lyrical about the amazing local scenery - the countryside, the mountains and the lakes - all day. It was too beautiful for words and my photos don't even begin to do it justice.
Lets just say, it was well worth the mammoth drive up from the south coast and I have every intention of returning to the area as soon as I can for a nice long holiday with the whole family in tow!
We had a couple of lovely walks around the lakes, soaking up the peace and beauty all day long as well as enjoying some delicious meals out - in a traditional local pub and a lovely tapas restaurant in nearby Cockermouth.
As I promised at the start of this post, I also have a fun Cumbrian recipe to share with you in this post! Upon my return home from the Lake District, I went hunting for some Cumbrian ring sausages to test some new recipe ideas, inspired by my visit to Cumbria, but being back down in the south of the country, my local supermarket wasn't on my side.
Undeterred, I decided to have a go at making my own Cumbrian sausage rings and after a bit of trial and error, I was really pleased with the final results. Both of my boys loved the fun swirly sausages on a stick and they made a great fun meal to celebrate Bonfire Night last month.
Though Bonfire Night has been and gone this year, I think they'd be fun for New Year's Eve too, as we think they look like little edible Catherine wheel fireworks!
Mini Cumberland Sausage Swirls on a Stick
Ingredients:
- 12 Cumberland chipolata sausages*
- oil, for greasing
- handful bamboo skewers
Method:
Preheat your oven to 190°C (Gas mark 5/375°F). Lightly grease a roasting tin or baking tray with oil.
Remove the sausages from the packet and separate them into pairs with kitchen scissors, leaving each pair of sausages joined together by the skin.
Carefully twist the sausages to unwind the skin between each pair, then squeeze the meat around inside the sausages so that the gap between each sausage is filled in. This should turn each pair of sausages into one long sausage each.
Roll up each long sausage into a tight spiral shape.
Push bamboo skewers through each sausage spiral to hold it together whilst cooking.
Place the sausage spirals on a baking tray then cook in the pre-heated oven for 20-25 minutes until sizzling and cooked through.
Carefully remove from the oven. Once cool enough to handle, remove the bamboo sticks from each sausage spiral and place on a plate.
Push a fresh bamboo skewer into each sausage spiral before serving, or serve straight onto plates without the stick if preferred.
Serve with fresh steamed vegetables and homemade potato wedges for a delicious and fun family meal!

*Note: Check before buying that the chipolata sausages are joined together by their skins rather than separated in the pack. If you can't find Cumberland chipolatas, any other chipolata sausage will work as an alternative.
