These cute heart shaped fairy bread sandwiches are made with homemade coconut sprinkles for a healthier Valentine's Day treat for kids - perfect for lunch boxes, snacks and party food too!

Following on from the Heart Apples I shared earlier, I've got another simple Valentines food idea for you today - cute heart shaped fairy bread sandwiches!

These pretty sandwiches are a fun way to say 'I love you' and are perfect for popping in bento boxes, packed lunches or serving up for a healthier snack on Valentine's Day.

Homemade coconut sprinkles - this pink and purple princess mix is perfect for Valentines Day too - Eats Amazing UK

Like my rainbow fairy bread sandwiches, this healthier take on traditional fairy bread uses my easy homemade coconut sprinkles in the place of sugar sprinkles.  You could of course use shop-bought sprinkles to make these sandwiches if you’re short on time, but don’t be put off by the idea of making homemade sprinkles, my coconut sprinkles are super easy to make (I promise!) and perfect for all sorts of fun food projects!

You'll find several different sprinkle mixes in the recipe post I linked to above, but I think that the pink and purple princess mix is perfect for these Valentine's Day sandwiches.

    Valentine's Heart Fairy Bread Sandwiches

    Ingredients:

    • 3 slices wholemeal bread
    • 1 Tbsp cream cheese
    • small handful homemade coconut sprinkles - princess mix

    Method:

Cut as many heart shapes as you can from the bread. You can use different sized cutters to fit in as many as possible, but make sure you have 2 hearts of each size.

Spread cream cheese over one of each pair of bread hearts and top with a generous pinch of coconut sprinkles.

Cut a smaller heart from the centre of each of the leftover bread hearts to create a 'window' in each slice.

Place on top of the cream cheese/sprinkle covered hearts to form sandwiches.

Pack in a lunch box or serve immediately.

    Enjoy!

Note: You can of course use conventional sprinkles instead of the coconut sprinkles to make these pretty sandwiches if you prefer.
