    Easy LEGO Sandwiches - Fun Food Tutorial

    These fun LEGO sandwiches were a big hit with my boys and have been requested several times since I first made them! They're great for popping into a lunch box, serving up as a special snack or for fun Lego themed party food.

    It's back to school this week after a lovely break over the Easter holidays and I'm back at work creating and sharing lots of new fun food ideas with you all. These easy Lego sandwiches were inspired by my boys, who spent most of their free time in the two weeks of school holiday building endless Lego creations. They pooled the contents of their money boxes together to buy lots of new base plates and spent hours making their own Lego world, so I thought they'd enjoy some fun Lego themed food to keep them fuelled up while building!

    I used sandwich thins to make these edible Lego blocks as they are already square so made it really easy. All I had to do was fill the sandwich thins, cut them into quarters and decorate them with circles of bread to turn them into Lego blocks. I used cream cheese for my 'glue' but you could also use mayo, honey, jam, peanut butter or any other spreads - whatever best compliments your sandwich filling. Using sandwich thins for these sandwiches makes them extra quick and easy so they're be perfect for making in bulk for easy Lego party food.

    Easy Lego Sandwiches

    Ingredients (makes 8 'blocks'): 

    • 3 wholemeal sandwich thins
    • 2 cheese slices or a sandwich filling of your choice
    • 1 Tbsp cream cheese

    Method: 

    Start by splitting and filling two of the sandwich thins, setting the third one aside for later. I used slices of Gouda cheese but you can use any sandwich filling you prefer.

    Cut each filled sandwich thin into 4 square quarters.

    Split the remaining sandwich thin. Using a small round cutter, cut 32 circles from the sandwich thin - four for each 'block'.

    Fix four circles to a block using a dab of cream cheese to 'glue' each one down.

    Repeat until you have turned all of the sandwiches into Lego blocks.

    Pack in a lunch box or arrange on a plate to serve (Lego men optional!).
