Ingredients

  • 3 wholemeal sandwich thins
  • 2 cheese slices or a sandwich filling of your choice
  • 1 Tbsp cream cheese

Instructions

  • Start by splitting and filling two of the sandwich thins, setting the third one aside for later. I used slices of Gouda cheese but you can use any sandwich filling you prefer.
  • Cut each filled sandwich thin into 4 square quarters.
  • Split the remaining sandwich thin. Using a small round cutter, cut 32 circles from the sandwich thin - four for each 'block'.
  • Fix four circles to a block using a dab of cream cheese to 'glue' each one down.
  • Repeat until you have turned all of the sandwiches into Lego blocks.
  • Pack in a lunch box or arrange on a plate to serve (Lego men optional!).

Notes

I used cream cheese for my 'glue' but you could also use mayo, honey, jam, peanut butter or any other spreads - whatever best compliments your sandwich filling.
